Pretty much the same as your turkey, but remember that goose is more fatty and rich so you dont need quite such a heavy gravy - a lighter fruity sauce would be more appropriate. Im making a cider and apple gravy to go with mine this year.

It needs something to cut through the grease, so Im also serving a nice cranberry, apple and apricot stuffing (very easy) and my homemade cranberry sauce.

Veggie-wise, the roast potatoes will of course be the best ever having used the goose fat to cook them, and nice lightly steamed sprouts and carrots are all that you need to compliment it!

I have to have bacon wrapped sausages!

Whatever you like to eat veges wise--- how about Figgy pudding for afters can't get more traditonal that that ---Well here it is the real Lancashire version . . . .

4 ozs of stale bread4ozs flour
3ozs shredded suet6ozs of figs
1 cup of milk 1 tsp. baking powder
2 tbsp. Syrup pinch salt & nutmeg

Soak the bread in the milk
Chop the figs and mix with the dry ingredients, squeeze the bread mash it with a fork and add to the dry mixture then mix in the syrup. Mix it well

Place in a greased pudding basin cover with a cloth and boil for two hours.

i would do what you like obviosly you get the best crispy roasties with the goose fat i like carrots & parsnips roasted in honey and sprouts with nutmeg and bacon and a nice sweet potato mash i would go with what people like so if you are cooking 4 the family make what they like and you cant go wrong merry xmas
