Can anybody please give me any good tips to make a light fluffy melt in the mouth sponge. I know the recipe, but my sponges always come out a bit on the heavy side, yes i have used alittle less flour, they tend to be dry, i have used the tip of spraying after with water while it is hot nd just out of the oven, didn't make any difference, i want to make a really light thin sponge so any tips would be appreciated .
