Cloutie Dumpling. No 1
3 cups of flour
4oz brown sugar
1 1/2 tsp baking soda.
1 tsp cream of tartar
1 slice of bread (rubbed into breadcrumbs
2 tsp of spice
4oz suet 3/4lb raisins
1/2 lb currants
1 small spoon of salt
1 small grated carrot 1/2 an apple
1 oz orange peel
1 tbsp golden syrup
2 tbsp black treacle
1 egg and milk
2 or 3 almonds
a piece of clean cotton or an pillowslip material,large enough to hold all the ingredients plus enough material to tie with a piece of string.
Mix dry ingredients together.add syrup and treacle,add enough milk to give the consistency of a scone mix.
flatten cotton materiel on work top sprinkle with flour, then put the ingredients on the cotton and tie in.
Have a large pot with boiling water and put mix in and boil for 3 1/2 to 4 hours.
As water boils out keep water in a kettle hot and add boiling as water goes down the water must be kept boiling hot or the dumpling will not be a success.
recipe No 2 without suet
3 tea cup flour= 11 1/2 oz
1 tea cup sugar = 6oz
1tblsp semolina
1 tblsp golden syrup
1/2 tbls black treacle
1 heaped tsp baking soda
1/4 lb margarine
1/4 lb sultanas
1/4 lb raisins
1/4 lb currants
2oz dates
1tsp each of ginger cinamon and mixed spice
1 grated carrot
1 grated apple
mix with milk to a fairly soft consistancy
prepare and boil as for recipe No 1 above

A clootie or cloot in Scots language is a strip or piece of cloth, a rag or item of clothing; it can also refer to fabric used in the patching of clothes or the making of proddy rugs (aka "clootie mats").[1] The saying "Ne'er cast a cloot 'til May's oot" conveys a warning not to shed any clothes before the summer has fully arrived and the may flowers (hawthorn blossoms) are in full bloom. [2][3][4]
A traditional dessert pudding called clootie dumpling is made with flour, breadcrumbs, dried fruit (sultanas and currants), suet, sugar and spice with some milk to bind it, and sometimes golden syrup. Ingredients are mixed well into a dough, then wrapped up in a floured cloth, placed in a large pan of boiling water and simmered for a couple of hours before being lifted out and dried before the fire or in an oven.[5]
Clootie wells are wells or springs in Celtic areas where pilgrims leave strips of cloth or rags, usually as part of a healing ritual.
A cloot less commonly refers to the cloven hoof of cattle, sheep or pigs, and from this the term Clootie is used as a euphemism for the Devil.[6]

try just over i/3 beef suet - 2/3 plain flour pinch of salt and add water untill it makes a stiff mixture and boil on top of stews,broths etc.
