1 lb beef stew meat or lamb stew meat
3 tablespoons olive oil
1 teaspoon cumin (to taste)
1 teaspoon paprika (to taste)
1-2 fresh jalapeno pepper, finely chopped
2 (14 ounce) cans canned stewed tomatoes

Cut the stew meat into half-inch cubes (smaller than you would for stew.) Season it with cumin and paprika.
In a saucepan, heat olive oil to medium high. Brown meat in olive oil, then add jalapeño(s) and tomatoes. Lower heat to simmer, and cook until meat is tender and sauce is nice and thick, but not dried out.
Serve over rice, or as a dip with warmed pita bread.

You could make a simple stir fry. Make sure you make the cubes bite sized.

1 Tbsp. olive oil
16 oz. pkg. frozen mixed vegetables
1 Tbsp. water
1 cup stir fry sauce
2 tsp. cornstarch
2 cups cubed stew meat

Heat olive oil in heavy skillet. Add vegetables and 1 Tbsp. water. Stir, cover, and cook over medium heat for 3 minutes. Uncover and add the meat. Turn heat to medium high and cook for 2 minutes continually stirring. Mix stir fry sauce and cornstarch in a small bowl. Add to skillet and stir to combine.

To make it into an appetizer you can serve it in a big bowl with steamed rice in a seperate bowl on the side. Small bowls, wood chop sticks and small forks.
