The other day in the teachers lounge(I'm a middle school teacher) I picked up a great Christmas dessert recipe that might do just the trick. Ive heard it called "Cracker Candy" and the result tastes something like a chocolate and toffee covered pretzal.(Yum!) The recipe is incredibly tasty and easy.
Recipe: Cracker Candy
Ingredients
1 Cup Butter
1 Cup Brown Sugar
1 Box Saltine Crackers
1 12 oz bag of chocolate morsels(any flavor)
1. Preheat the oven to 350
2. Line a baking pan(one with sides) with foil. Cover the entire baking pan with saltine crackers leaving as few gaps as possible.
3. In a pot bring 1 cup butter and 1 cup brown sugar to a boil and cook for 3 minutes.
4. Pour the butter brown sugar mixture over crackers and spread evenly.
5. Bake cracker-sugar mixture in the oven for 8-10 minutes until bubbly. Be careful not to let it burn
6. Take out of the oven and immediatley pour the entire bag of chocolate morsels on top of the crackers. When chocolate melts spread evenly and let cool for about an hour.
7. Put baking pan in the fridge until the mixture has hardened and cooled.
8. Break into pieces and enjoy!

I recommend something called Massacre in a Snowstorm - it's so easy to make, and it's nice and light, which is good after a big meal.
You can make it in one big bowl, or make up individual ones in nice bowls or large wine glasses.
Crumble some meringue into bowl - not too small, you want nice chunky bits. Then pile up whipped cream on top (or you can use a mix of mascarpone and creme fraiche) and stir together a little, so it's a big mess. Then cut some pomegranates in half and scatter the seeds over the top of the meringuey creamy pile. The look so red and glossy and shiny, and the fresh fruity taste works really well with the meringue and cream.
It's a bit like Eton Mess, but more Christmassy. It takes less that five minutes to prepare too, and leaves hardly any washing up.

Ice cream, cake, chocolate mousse, gingerbread, Christmas biscuits...etc. There are so many easy deserts you can have because i've never had christmas pudding!

Dessert for 4
buy 4 small tubs of toffee flavour yoghurt add to 3/4 small sliced up bananas mix and put in individual dishes sprinkle with crushed ginger biscuits - fridge for 2 hours

take a soft sponge cake and put it into a bowl at the lower most layer
then raspery or strawbery cut and add castor sugar and one tsp white wine to it and
finally put some fresh cream or ice cream over the rasperry or strawberry layer
cut and serve
this is the best treat you can ever give
with hugs and kisses
