Restaurants use a cheap colouring agent available as a powder from any grocery store. Its called Orange red.
I would suggest another alternative of cooking a few bits of beetroot and a carrot together. Grind it when cooked in a mixie and use it as a colouring agent.Its safer.
But if you are sure that you want that red colour that restaurants use, which does not come off even when you wash your hands several times, go ahead and buy the Orange red powder and add a pinch to a bit of water. Add the solution in drops to your curry otherwise you might over-do it.

Vegetable Curry
Ingredients for Cooking
Chinese Okra - 1(beerakaya)
Carrot -
Onion - 1
Tomatoes - 1/2 cup
Peas - 1/4th of a cup
Milk - 2cups
Cumin powder - 1 tbsp
Corriander Powder - 1 tbsp
Red Chilli Powder (use kashmiri chilli to give red colour)- 1 tbsp
channa dhal - 1 tbsp
Salt as required
Oil -required
Turmeric -little bit
Method:
Heat oil in a tava, then fry channa dhal and onion nicely till onion gets transparent color
Then add tomatoes , okra and fry that nicely then add carrot and peas then close it with one plate
Let it fry for 10min (keep stirring in between)
Then add , turmeric, cumin powder, dhaniya powder and redchilli powder and salt mix that properly
At last add milk , in that vegetables will cook, if milk was evaporated add some more milk.

believe me this will turn out excellent!!!
Red curry : malai vegetables curry
1) cook 200 gms red onion slices in enough oil untill its brownish but not burnt. cool it
Put all following ingredients in blender and add little water: 10cashew nuts, 10 almonds , 1/4cup of fresh cream., 2 large tomatoes sliced ( or 1 cup tomato puree) 1/2 inch giner cube.and cooked onions.
Once the paste is ready , u can take 1 tbsp butter or oil ,
heat oil and add cinnamon stick,2 cloves and bay leaf ,1 cardamom and cumin seeds. saute and then add above paste.
add chilli pwdr, salt as per taste
U can either :
1) pressure cook it with vegetables of ur choice. can take 15 mins on a low flame.
2) boil the curry with veggiesadding little water for atleast half an hour in a non stick pan with lid . untill the oil has surfaced.

I usually add a medium carrot (the tender and redder variety used to make gajar ka halwa)to about a 1/4 kg. of tomatoes, put both in the blender and then fry the mixture in a little oil. See the beautiful colour that emerges and the carrot does not overshadow the taste of the original curry flavour. Trying to colour it with paprika will make it very spicy and you may not want that.

1 can coconut milk
1 Tbsp. red curry paste
1/4 cup fresh basil
1 Tbsp. honey
Mushrooms
Carrots
Red bell pepper
Broccoli
Snow peas
3 cups cooked brown rice
Simmer coconut milk and curry paste for 5 minutes then add honey and basil. Add vegetables and simmer 10 minutes. Serve over brwon rice.

In restaurants they also use the food colour or beet root extract. Better way to make your curry red is to use Degi Mirch or Kashmiri Mirch. It is red but less pungent. Again, initially do not add meat Masala or gaaram masala at the time of cooking. It makes your curry black. Instead add it at the end.

The use of the spice Paprika, which has a natural red colour will add that Red to your vegetable curry !
It will also add some heat... which is a must for a good cury. :)

if you're making a Thai style dish, use red curry paste to get the flavour and color. You can also add chilli paste to make it hotter and experiment with different colorful spices like cayenne pepper, chilli powder, tumeric (yellow) and paprika. Of course, roasted red peppers to your vegetable dish would be a nice, sweet complement.

It sounds like Achiote Red Paste. Not too sure, but that is all I can come up with. I do apologize if this is not the correct one. But from my knowledge of cooking it sounds just about right.
