A special friend is coming over from PA and I would like to prepare something from the area. I am planning to include some Mexican food, especially from the states of Veracruz, Oaxaca and Yucatan, but I have no idea what Pennsylvanians enjoy (not sandwiches, hamburgers or hot dogs, please).

Dough is used extensively in Penslania/Dutch Cooking. Rivels, noodles, dough balls, and all kinds of dumplings are used in soups, meat dishes, with vegetables and even in desserts, such as cherry, rhubarb, or berry dumplings.
Raised dough is baked in loaves or made into coffee cakes, sticky buns, sugar cakes, rolls as well the German kuchen. Recipes for raised dough vary in proportions, but many of them call for mashed potatoes. These potato doughs are very light and moist. Special doughnuts called fastnachts are made for Shrove Tuesday.

"A combo of my maternal and paternal grandmothers' recipes. It's what I grew up on....slow-cooked stuff w/ the veggies cooked to mushiness. Kinda comforting sometimes. They made there own pot pie noodles....I buy 'em. They used onion; I like leeks. I also added a bay leaf. It's a tummy-warmer. You could use chicken thighs and/or breast, but thighs are just so more juicy! Serving size is a guess. The way my grandparents ate, this would probably feed two....maybe four if they were saving room for Shoo-Fly Pie"

In North Eastern Pa If its got potatoes garlic onion and butter, you should be good lol. theres a lot of people from around here with either Irish German Polish Welsh or Italian decent or a little or each. Home made Haluski would be easy and yummy. I'm not quite sure what is in any of the Mexican dishes but I'd say it would be the safest bet.

When people think of authentic PA cuisine, Amish fare usually comes to mind......Pork Scrapple, Shoo-Fly Pie, Chicken Corn Soup, Amish Friendship Bread, etc. There are a lot of immigrant communities throughout the state: Italian, Polish, Irish, Middle Eastern, to name a few, so you can find various cultures represented in the most populous areas. The only true "Pennsylvanian" food is the Cheesesteak, however, if you dont want sandwiches, there IS such thing as a cheesesteak pizza.
