According to foodnetwork.com, you can make the mashed potatoes early and then reheat them before dinner. What do you do with them in the meantime? Put them in the fridge?

I love to cook, but I hate my cookware. The cookware we own is quickly becomming inadequate as my skill increases and dishes get more complex. Ive learned a lot but there are so many different types of cookware that I am unsure what to buy. I would like ot hear from those who consider themsleves accomplished in the kitchen or perhaps are chefs or chefs assistants. Do you prefer stainless steel, enamel, copper clad etc.

Whole Wheat Applesauce Cake

1 c. canola oil
1 1/2 c. light brown sugar
2 c. unsweetened applesauce
3 c. whole wheat flour
2 tsp. baking soda
2 tsp. cinnamon

375 ' / 45 min / let cool 5 / unmold
(no eggs)

I am wondering if canola oil is fine or if I should use some melted butter as part of the 1 c. measure, for taste as much as anything...

I am also thinking it would be nice to add raisins or walnuts or some nutmeg ....... or a combination of all
three ... or maybe just some citron or candied peels.

What do you think would be nice? It seems so plain to me... I keep thinking a splash of cream would be
good or maybe some molasses ....
But, maybe I'm wrong..... maybe the very fact that it is so plain would make it very nice...

My pumpkin cheesecake recipe calls for 2 tablespoons of brandy (if desired). I was just curious if there is anything I might have in my kitchen already that would duplicate the flavor? Otherwise, I 'll just omit that one ingredient.
