i think they ask to use canola oil because of the fat cotent or because of the smoke point. but i think melted butter would be fine but try to make it unsalted butter?
I think raisins and dried cranberry would be nice and add some slithered almonds is a nice combo
or apple and some sort of citron would be ok but it still would a simple flavor but good depth
you know it can be simple. but maybe u can make a fruit compote or some sort of fruit sauce or icing or sweet sauce like and pour it over each slice right?

I would substitute nucoa margarine melted in the microwave instead of canola oil or you could make it with real melted butter. Yes I would add some raisin and walnuts and candied peels. About the molasses or a splash of cream that is your choice. Try it and you might like it. This sounds very tasty and its making me hungry!!Well anyway have a Happy Thanksgiving and a safe one too!!

Nutmeg, cloves or ginger would be good, just watch your portions and leave out 1 tsp of cinnamon if you use another spice. You have light brown sugar which has molasses in it so maybe try dark brown sugar for more robust flavor. Something sweet like raisins would be good to cut that whole wheat flour flavor (which can be bland). I don't know about candied peels, that doesn't sound very good. For nuts, how about toasted walnuts or pecans - more depth of flavor there too.

The great thing about cooking, especially when the recipe is not complex and the ingredients inexpensive is that we can experiment. ;)
The canola oil is the fat that is being used to bind the dry ingredients together. If you did try butter I would suggest using unsalted. Adding a flavorful fruit is a great idea. Maybe figs and I like the molasses thought

add a little ginger. with the rasins, walnuts, and nutmeg. If you glaze it or put icinig on it put the candied pieces on top

you can add some or all these things because i find that when i add more or change something it tastes even better.recipes can be added to or changed to be made better. good luck and happy thanksgiving.
