My pumpkin cheesecake recipe calls for 2 tablespoons of brandy (if desired). I was just curious if there is anything I might have in my kitchen already that would duplicate the flavor? Otherwise, I 'll just omit that one ingredient.

Since it's being used as a flavoring you could substitute vanilla extract- or another extract you may have such as almond or lemon.

Brandy is distilled wine. Basically, they take wine, and remove a certain amount of the water. If you really want to get technical, you can check the proofs. Divide the proof of the wine by the proof of the brandy, and add that much more wine to get a similar flavor. You'll have to cook it down a little longer to get the liquid out of the wine though.

Vanilla extract. Brandy doesn't really enhance the flavor of pumpkin pie.
