could I actually substitute syrup for molasses?

If what you are cooking is a cake or pie (something that gets baked) then molasses will work just fine. I have used it in a pinch before with good results.

In a pinch...
for every 1/2 cup of white sugar, use a heaping tablespoon of molasses.
