I love to cook, but I hate my cookware. The cookware we own is quickly becomming inadequate as my skill increases and dishes get more complex. Ive learned a lot but there are so many different types of cookware that I am unsure what to buy. I would like ot hear from those who consider themsleves accomplished in the kitchen or perhaps are chefs or chefs assistants. Do you prefer stainless steel, enamel, copper clad etc.

Cast iron is great, but it hurts a hell of a lot more when the wife swings it ;)

Do you have a gas or electric stove?
The purpose of a copper plate is to conduct heat. It requires less energy. Cast aluminum also heats better than stainless steel, but costs a lot more.
For saucepans, I prefer basic copper bottom stainless steel.
For saute pans cast aluminum with teflon. Or, cast iron.
Cast iron is best for gas stoves.
A non-coated stainless steel pan works great if you have time to cook s-l-o-w-l-y. The higher the heat, the more oil it requires to prevent sticking, burning.

If you have one of those new ranges, where the element is underneath a ceramic surface, enamel will be good.

I love my Le Creuset dutch oven. I have a small one and I am going to buy a bigger one. You can use them on the stove top AND put them in the oven. I didn't know I would get so much use out of it when I bought it. They are cast iron enamel. For all stove top I use calphalon stainless steel which are indispensable and easy clean up. I also have a couple of Calphalon non-stick fry pans - one big and one little - with lids.

I'm very happy with Lagostino too, even the frying pan which surprised me since I used to have only cast iron and enamel frying pans. This stainless one performs very well. I'm not careful how I clean it, using a green scrubby pad, and it has minor scratches but still looks very good after almost 10 years. Look for a sale price if you can wait.

i prefer stainless, non-stick and cast iron..
they all serve different purposes...
good luck in the kitchen..
I saw that Emeril has a new line of cook ware..
I can't wait to see it in Canada!!

Personally I prefer cast iron.

It is extremely durable and versatile, it distributes heat evenly, it is naturally non-stick (when properly seasoned), and cleanup is a breeze.
