does anyone have a recipe for sweet potato pie? I am looking for one that doesn't call for a pie crust. I also would like it to be a little too sweet.

I forgot a recipe but I know that it didn't call for corn syrup and you had to boil the sweet potatoes and blend them into the mix.

I have a great recipe for sweet potato casserole, which is basically the pie without the crust.

3 cups sweet pot., cook until tender & drain (canned is fine too)
in mixing bowl, add sweet pot., 2 eggs. 1/2 stick butter, 1 tsp. vanilla, 1/2 cup sugar.
beat until light and fluffy
pour into 2 qrt. buttered casserole dish.

topping:
1 cup brown sugar
1 cup chopped pecans
1/3 cup flour
1/3 cup softened butter

mix topping ingredients and sprinkle over potato mixture, bake for 30 minutes at 350 degrees.

Enjoy! My mother-in-law makes this every year on my request, I LOVE IT! Hope you do too!!!
