Baked Macaroni and Cheese
Macaroni and cheese, made with a homemade white sauce with cheese and butter, along with cooked macaroni and seasonings.
INGREDIENTS:
* 1 1/2 cups uncooked elbow macaroni
* 2 tablespoons butter
* 2 tablespoons all-purpose flour
* 1/4 cup milk
* 1 cup half-and-half
* 1/4 teaspoon paprika
* 1/2 teaspoon pepper
* 2 1/2 cups grated sharp cheese, divided
* salt
PREPARATION:
Preheat oven to 350°. Cook macaroni in boiling salted water according to package directions; drain well and set aside. Meanwhile, melt butter in a medium saucepan over low heat. Blend in flour, stirring constantly, until smooth and bubbly.Gradually stir in milk and half-and-half. Cook, stirring constantly, until mixture boils and thickens, about 2 to 3 minutes. Remove from heat and add paprika, pepper, and 2 cups of the cheese; stir until cheese is melted and sauce is smooth. Combine sauce with the macaroni and add salt to taste. Place in a buttered 1 1/2-quart casserole dish. Garnish top with remaining 1/2 cup of cheese and dot with additional butter. Bake 25 to 30 minutes.
Serves 4 to 6.

I like to make a cheese sauce by taking a little butter and flour and cooking it together for a few minutes, then whisk in some milk and melt the cheese into that. Stir the cooked, drained noodles into the cheese mixture and pour into a baking dish. Top with more cheese and breadcrumbs if you want, and bake that at 350 until the top starts to get browned.

Bring a pot of water to boil
2 pinch of salt
boil pasta or the macaroni (8 mintues)
while that cooking...
grab a pan and shred or chop some cheese
any cheese u want... cheddar, sharp cheddar, gouda
then get a sauce pan use half amount of heavy cream to cheese.....( 1 cup of cheese, 1/2 cream....4 cups of cheese, 2 cups of heavy cream) then add cheese to melted
drain pasta make sure no water like at alll. combine cheesy ...mix and add to casserole....top with breadcrumbs for extra crunch if u want

-preheat you oven to 350
-boil the noodles,
-drian and cool
-depending on the ammount of noodles,
-grate your cheese, use all kinds if you like,
-layer you noodles and cheese in you baking dish
-save som cheese for the top
-in a bowl crack an egg, add some salt and pepper, and a small amount of milk
-pour this over the dish, it will act like a binder, so when you scoop it out, it won't all fall apart.
-cook covered for aprox 30-45 minutes,
-let cool for 5-10 minutes, then searve it..
I make it all the time for my kids, they love it!!

"Old-Fashioned Macaroni and Cheese" - 4 to 6 servings
2 cups uncooked elbow macaroni
3 tbsp. butter or margarine
2 tbsp. finely chopped onion
2 tbsp. all-purpose flour
1 tsp. salt
1/4 tsp. pepper
2 cups milk
3 cups shredded American cheese
1 tbsp. buttered bread crumbs
Prepare macaroni according to package directions; drain.
In large saucepan, melt butter; add onion and cook until tender. Stir in flour, salt and pepper; blend in milk. Cook, stirring constantly, until thickened and bubbly. Add cheese; stir until melted. Combine macaroni and cheese mixture; mix well. Pour into buttered 2-quart baking dish; top with bread crumbs. Bake at 350* - 30 minutes, until hot and bubbly.
"Triple-Cheese Macaroni" - 6 servings
1 (16 oz.) pkg. elbow macaroni
2 eggs
1 (12 oz.) can evaporated milk
1/4 cup butter; melted
2 tbsp. prepared mustard
1 tsp. seasoned salt
1 tsp. pepper
8 oz. process cheese (Velveeta); melted
2 cups (8 oz.) shredded mild Cheddar cheese; divided
2 cups (8 oz.) shredded sharp Cheddar cheese; divided
Cook macaroni according to package directions.
Meanwhile, in a large bowl, whisk eggs, milk, butter, mustard, seasoned salt and pepper until combined. Stir in the process cheese and 1 1/2 cups of each Cheddar cheese.
Drain macaroni; stir into cheese mixture. Pour into a greased 3-quart baking dish; top with remaining cheeses. Bake, uncovered, at 350* for 25-30 minutes or until cheese is melted and edges are bubbly.
"Creamy Ham 'n' Macaroni" - 6 servings
2 cups uncooked elbow macaroni
1/4 cup butter; cubed
1/4 cup all-purpose flour
2 cups milk
4 tsp. chicken bouillon granules
1/4 tsp. pepper
2 cups (8 oz.) shredded Cheddar cheese; divided
1 1/2 cups cubed fully cooked ham
1/4 cup grated Parmesan cheese
Cook macaroni according to package directions; drain and set aside.
In a large saucepan, melt butter over low heat; whisk in flour until smooth. Whisk in milk, bouillon and pepper; bring to a boil. Cook and stir 2 minutes or until thickened; remove from heat. Stir in 1 cup of the Cheddar, ham, Parmesan and macaroni.
Transfer to a greased 2-quart baking dish; sprinkle with remaining Cheddar. Bake, uncovered, at 350* for 20-25 minutes or until bubbly. Let stand for 5 minutes before serving.
