This is a very basic question. I want to make some clear soups (beef barley, udon, etc.) and I don't know how to make beef/chicken/vegetable soup base. I read some recipes and they all call for soup broth that you buy in a can, but I want to make my own. Can you help me? Thanks.

I should have put it in sooner but didn't. It needs to be done before my boyfriend goes to work at four. I put it in at 9am (One hour ago) and have it on high now. Should I leave it on high or put it on low? Or leave it on high for a little bit then turn it down? I don't want it to burn on high, but want it nice and tender.
