Oooh, I love crepes.
ham & swiss cheese (with or without asparagus)
spinach and cheddar cheese (add bacon if you like)
sauteed mushrooms and brie cheese
brie and sundried toatoes or pesto
chicken with a creamy sauce
tiny shrimps in alfredo sauce
ham, sliced pears and brie
baby spinach, brie and seedless red grapes
pretty much anything you can think of.
if your filling is dry it's good to serve with a sauce.
(ie: hollandais for crepes with ham or honey mustard for the one with spinach & grapes, etc.)

Savory=NOT sweet, people!!
Here's some of my favorites:
Sauteed Spinach, garlic, green onion and cream cheese
Mushroom, Broccoli and Cheddar cheese
Ham, Swiss Cheese, Dijon Mustard
Crab, Buttered Bread Crumbs and Shrimp
Creamed Chicken
Mu Shu Creps (like Mu Shu Pork in Chinese Restaurants)
Scrambled Egg w/ Chives, Cheddar Cheese and Ham (think Breakfast Crepes)
Those are the ones that are the most requested at our B&B......

seafood crepes with lobster or crab bits in an alfredo style sauce or spinach,mushroom and feta cheese crepes, these are two of my favorites.

once i wanted to make a meal of what i've got and now that's one of my favorite things ever. for the filling mix soft cheese, mushrooms (forest mushrooms work best) and spinach. roll it into pancakes, place into baking dish, top with good quality tomato sauce and grated cheese and bake for about 30 minutes. you'll love it!

Try mushrooms. I don't like them, but lots of people do. Or what about hummus? If I were you, I'd just experiment with what's in your fridge and spice cabinet. Eventually, you've got to find something delicious.

Black forest Crepes are to die for!!!!!!!! The filling is made of cherry pie filling, and is topped with chocolate sauce.
Here is the recipe for Chocolate Sauce.
3/4 cup of sugar
1/3 cup of cocoa
3/4 cup of evaporated milk
1/4 cup of butter
1/8 tsp of salt
1 teaspoon of kirsh(optional)
Mix all ingriedients in saucepan except the kirsh and boil than pull of stove and add kirsh.
