What side dishes should I serve with a roasted chicken? I'd prefer some that are not terribly unhealthy.

Mushrooms in wine sauce is a great companion of roast chicken.

Drain 1 can per serving of mushrooms, saute in butter or olive oil. Add 1/2 cup wine, turn up heat and reduce. Yummm!

starch - buy baby Yukon gold potatoes: preheat the oven to 400 and put your baking sheet in there and wash them and then take a veg peeler and go around the middle to put a "strip" on the potatoe and then toss them with olive oil, whole pieces of garlic and rosemary, kosher salt and black pepper and put them on the PREHEATED (this really works) baking sheet and they will take 20 minutes.

the veg: whole green beans not cut I use frozen, in a pot with the lid put an inch of water and boil then add green beans until they cooked but firm then drain then and in the same pot put olive oil, garlic and let that heat up on medium high for a couple of minutes till you smell the garlic and then add the beans back with salt and black pepper and toss. this is also a great recips to serve room temp for a green bean salad :)

baked potatoes, with butter and some garlic,

sweet peas (green)

some chutney (mango) or cranberry relish

spring water

a bread-stuffing either baked in the chicken itself
or baked in a pani n the oven small cubes of bread, toasted; garlic and onion browned in butter and oil, some pieces of celery(or little sprigs of lovage), some salt and black pepper, or even a little garam masala, pieces of sausage if you have some, about 3/4 cup of water to moisten it, and a couple of spoonsful of melted butter ~~~~ or just buy a packaged stuffing and follow the directions~~~~

and then something warm for dessert ~~~ an apple pie or apple turnovers and tea / coffee or hot spiced cider

I usually boil some new potatoes in water with the skin on and steam some fresh runner beans and sweetcorn to go with it.

I don't add any butter as I think it ruins the taste - it's also healthier that way.

sweet taters nice peas and a hellish great salad, dessert make a nice custard like they serve in the hospitals and put low cal dream whip all over it! Oh and cranberry sauce or real ones cooked down

Start with soup any kind you prefer. Pasta with minced meat and white sauce. For beauty and nutritional value add green salad of tomatoes,cucumber,carrots with lemon juice salt and oil.If yuou like add scalded potatoes with green carafes

steam asparagus or brocculi, mashpotatoe or oven roasted potatoe (easy). cut potatoe in cube, pour some olive oil, salt, pepper, rosemarry and bake on baking sheet with 350 20-30min or till done.

I like a nice rice pilaf and a salad with everything - lettuce, tomato, cucumber, sliced radish, scallion, black olives, water cress, feta cheese. Dress salad with olive oil & red wine or balsamic vinegar.
