you want gooey !!!
start by making a basic white sauce: 2 to 3 tbsp of butter & flour in a sauce pan cook it for a couple minutes over med-high so flour doesn't have a raw taste, then add 1 cup of milk let come to a simmer add some salt & pepper to taste and my secret ingredient fresh gorund nutmeg ** a pinch ** it goes a long way, take off heat & add your favorite cheeses.
I usually add parmessan, sharp cheddar & mozzarella or swiss. Then toss in your maccaroni or mini shells mix well and pour into a baking dish, add some bread crumbs mix with parmesan cheese on the top and then drizzle with melted butter or olive oil, bake @ 375* until golden brown and uey gooey bubblicious

I buy the generic box of mac & cheese & prepare it according to the directions. When you get to the part where you're mixing the sauce, add in just a little extra milk & 3-4 slices of Velveeta cheese.

In all honesty (unfortunately) use Velveeta. When I use good sharp cheddar, it turns starchy and firm. When I've used Velveeta I guess the monstrous amount of oil in it keeps it gooey.

use a semi-soft cheese: asiago, havrati, jarlesberg, pepper jack, mozzarella, fontina, munster, they make good cheese
