I live in a high altitude area (over 5,000 ft) and I haven't been able to make corn fritters, since leaving sea level (they won't hold together). I was wondering if anyone has or knows of someone who has made them in a high altitude area and what is the trick to getting them to hold together.

I have a recipie that calls for boneless, skinless chicken. It says to put them in the bottom of the pot, do I have to cut them up or do you think they will just fall apart themselves after cooking all day? Im assuming put them in whole?

a recipes of mine calls for 2/3 a cup of butter, but all I know is that butter comes in 1/4 cup sticks. So do I need 2 and a half sticks of butter? Im confused hehe.
