Chicken Parmesan
Serves 6
1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture.
Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6
6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated
Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.
In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.
In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.
Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Crab Quiche
Serves 6
1 (8 oz pkg.) Louis Kemp Crab Delights, flaked
3/4 Cup Mexican Style Cheddar Cheese, shredded
1/2 (8 oz pkg.) Cream Cheese, cut into 1/4'' cubes
1/4 Cup Green Onions, sliced
1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 Seconds Nonstick Cooking Spray
Instructions:
Preheat the oven to 350ºF
Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.
Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.
Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.
Serve immediately.

Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Mild Chopped Green Chilies (leave these out if you don't want it to be spicy)
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all the ingredients into the crock pot. Mix and cook low 4-6 hours.

Gravy Baked Pork Chops
Serves 4
4 (1-1/4 inch thick) Pork Chops
1/2 Tsp Salt
1/4 Tsp Freshly Ground Black Pepper
1 Tbsp Unsalted Butter
3/4 Cup 2% Milk
1/4 Cup Water
1 (10-3/4 oz can) Cream of Mushroom Soup
Instructions:
Preheat the oven to 350º F.
Season pork chops with salt and pepper to taste. Melt the butter in a large skillet over medium high heat. Sauté the pork chops in the butter for about 5 minutes per side.
In a separate medium bowl, combine the milk, water and soup. Place the pork chops in a 9x13 inch baking dishand pour the soup mixture over the chops.
Bake for 45 minutes. Serve immediately.

Spanish Meatloaf
Serves 6
1-1/2 lb Ground Beef, lean
1 (1.25 oz pkg) Taco Seasoning Mix
1/2 Cup Sour Cream
1 (4 oz can) Diced Green Chili Peppers
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
Instructions:
Preheat the oven to 350ºF
In a large bowl add the ground beef. Sprinkle the taco seasoning mix and blend well. Add the sour cream and diced green chili peppers; mix until well combined.
Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal. Bake for 45 minutes. Drain off any excess fat.
Remove from loaf pan and slice. Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

Strawberry Shake
Serves 2
1 Cup Frozen Strawberries, thawed
2 Tbsp Honey
1 Cup Cold 2%Milk
1 Cup Plain Yogurt
2 Whole Strawberries, garnish
2 Tbsp Sugar Substitute (recommended: Splenda)
Instructions:
Puree the strawberries and honey in a blender or food processor. Add milk, sweetener and yogurt; blend until smooth.
Pour into glasses; garnish each with a whole strawberry.

How about Cornish Game Hens?
I usually buy a boxed rice pilaf & cook according to the box directions, adding some garlic. Stuff the hens with the pilaf. Tie their little legs together & bake breast side up @ 325 degrees. I usually baked them around 40 mins. After the first 15 minutes, I usually baste them, fairly often, with a mixture of melted butter, white zinfadel wine & garlic. The left over wine you can put in a carafe & serve with the meal.
I make this meal for my husband & me on special occasions. I usually start with a salad, then the main course of Game Hen, pilaf & broccoli & cheese sauce. Of course you will need the wine, wineglasses, china & candles. Flowers are always a nice touch too.
For dessert I normally serve cheesecake. Just the Jello brand. All in all this is a easy meal & makes the house smell yummy.

For a romantic dinner, you want to stay away from anything with onions or garlic and nothing messy to eat, but you don't want to be too bland either. So I suggest for the entree a fish dish. Maybe a white fish sauteed in butter with a shrimp sauce or baked salmon with a lemon butter sauce. Both go nice with wine too. And for dessert something light like a chocolate mousse or a creme brulee. All you need is a great salad and you are set.

i would go with fillet Mignon wrapped in bacon with sides of broccoli with a Holland sauce and and your choice of potato for desert strawberriess and chocolate take a syringe and fill it with chocolate then insert ti in the strawberrie(and if that's not good enough go to apple bees and order a triple chocolate melt down they are the bomb!)

Chicken Piccata
Linguine Noodles
Steamed Broccoli or Fresh Green Beans
A loa of fresh French bread w/ room temp butter
Amaretto Walnut Brownies
CHICKEN PICCATA
2 skinless and boneless chicken breasts, butterflied and then cut in half
Sea salt and freshly ground black pepper
2 cups all purpose flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped
Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
In a large 10 or 12-inch skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.
Reduce heat to medium low and add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

Amaretto Walnut Brownies
1 cup coarsely chopped walnuts, toasted (I did this in a dry skillet)
1/2 cup almond (amaretto) liqueur, such as Disarrono
1 cup butter
8 (1 oz) unsweetened chocolate squares
5 large eggs
3 1/3 cups sugar
1/4 cup Swiss Mocha instant coffee mixture
1 Tbsp. vanilla extract
1 2/3 cups all-purpose flour
1/8 tsp salt
Garnish: toasted walnut halves/powdered sugar
*Soak chopped walnuts in liqueur 4 to 6 hours. Drain, discarding liqueur. (Mine soaked about 3 days. The liqueur gets cloudy and full of nut particles.)
*Melt chocolate and butter in a heavy saucepan over low heat. (I melted my mixture in the microwave stirring every minute or so.)
*Beat eggs, sugar, and swiss mocha mix at medium-high speed with an electric mixer for 8 minutes. (This is how the brownies get their leavening. The mixture will turn almost white.) Gradually add chocolate mixture, beating at low speed until blended. Gradually add vanilla, flour and salt, beating until blended. Stir in chopped walnuts. Pour into a lightly greased parchment lined 13 x 9 inch pan.
*Bake at 350ºF for 30-35 minutes. Cool on a wire rack. Cut into squares. Garnish if desired. Yield: 15 brownies.
These brownies are tall, but they are also fudgy. The amaretto gives them a nice flavor, but it is not overpowering. I think walnuts are used because they're so mild they take the added flavor well.

how about a nice romantic italian dinner? chicken marsala is easy. serve with oven roast potatos and stir fry greenbeans. for desert a tiramisu can't be beat. it might take a while but here are some recipies --
