Sorry about the spelling was'nt sure how to spell it. I remember having some of this as a child, but don't know anyone who knows how to make it. I know it looks similar to a pie, contains meat mushrooms etc. Any help would be greatly appreciated.

This is a Base recipe you can add whatever you like to it from Lobster to Garlic.

Spicy Quiche
Makes 6-8 servings
Ingredients:

1 recipe for single crust 9 inch pie
1/2 cup ham, chopped
4 slices bacon, crumbled
1 cup Swiss cheese, grated
1 cup cheddar cheese, grated
1/4 cup onion, chopped
1 medium tomato, chopped
2 jalapeño peppers, chopped
2 tablespoons chopped mushrooms
1 tablespoon parsley
4 eggs, beaten
1 teaspoon dry mustard
1/2 cup sour cream

Preparation:

Preheat oven to 350°F.

Layer the first 9 ingredients in pie shell. Combine eggs, sour cream and mustard, mix well. Pour over ingredients and bake in preheated oven for about 45 minutes or until a knife inserted in the center comes out clean.

If the edges of the pie crust begin to get too brown, cover with strips of aluminum foil.

"Quiche Lorraine" - 6 servings

9" pie shell; unbaked
12 slices bacon; crisply fried and crumbled
1 cup shredded natural Swiss cheese
1/3 cup minced onion
4 eggs
2 cups whipping cream or light cream (20%)
3/4 tsp. salt
1/4 tsp. sugar
1/8 tsp. cayenne red pepper

Heat oven to 425*. Sprinkle bacon, cheese and onion in pie shell. Beat eggs slightly; beat in remaining ingredients. Pour cream mixture into pie pan; bake 15 minutes.
Reduce oven temperature to 300*; bake 30 minutes longer or until knife inserted 1" from edge comes out clean. Let stand 10 minutes before cutting. Serve in wedges.

Bacon and Cheddar Quiche

* 1 1/3 cups all-purpose flour
* 1/8 teaspoon salt
* 1/2 cup cold butter, cut in small pieces
* 2 to 3 tablespoons ice-cold water

Filling

* 8 strips lean bacon, cooked and crumbled
* 4 large eggs
* 1 1/2 cups light cream
* 1/4 teaspoon dried leaf thyme
* 1/8 teaspoon pepper
* 1 cup shredded sharp Cheddar cheese

Prepare crust for quiche. In a mixing bowl, mix together flour and salt. Cut in cold butter with a pastry blender until coarse crumbs form; add water, a little at a time, until dough holds together and forms a ball. Shape into a disk, wrap in plastic wrap, and refrigerate for about 30 minutes.

On a lightly floured surface with a floured rolling pin, roll out dough into a circle about 11 inches in diameter. Fit dough into a 9-inch pie plate or quiche pan. Trim edges, leaving a little overhang, about 1/4-inch all around the edge. Prick dough with a fork. Line with foil and fill with dried beans or pie weights. Bake quiche crust for 10 minutes at 375°.

In a small bowl, whisk together the eggs, cream, thyme, and pepper. Pour into the baked crust. Crumble bacon over the top with the shredded Cheddar cheese. Bake at 375° for about 30 minutes, or until quiche filling is set and lightly browned. Serve quiche with fresh tomato wedges.

Quiche serves 8.

SPINACH QUICHE

1 pkg (8 oz.) cream cheese, softened
4 eggs
1 cup pet evaporated milk
1/4 to 1/2 tsp. ground red pepper
1 pkg (10 oz.) frozen, chopped spinach, thawed and thoroughly drained
1/2 cup diced ham and/or chopped onion
1 prepared deep-dish pie crust, frozen

In a medium bowl, beat cream cheese with electric mixer until creamy. Beat in eggs, evaporated milk and red pepper.
Squeeze spinach between paper towels until almost dry. Stir spinach and ham or onion into egg mixture.

Pour into frozen pie crust. Sprinkle with salt and pepper to taste.

Bake in a preheated 350 degree F. oven on a preheated baking sheet for 55 to 65 minutes, or until a knife inserted in center comes out clean.

Makes 6 servings.

Variation: Top quiche with tomatoes for added color.

LAST TIME I FLEW A KITE WAS MANY YRS BACK. ITS FUN HOPE SOMEONE CAN TELL YOU HOW TO MAKE THEM THERE COOL.
