Can I use Lambs liver ? After soaking in milk?Or duck livers-I find chicken livers very strong.But I dont think you guys in the States have Sheep therefore Lambs- Maybe I'm wrong.Do tell!!

My italian buttercream (egg whites + sugar syrup/softboil stage + butter) always splits once i start adding butter, anyone have any ideas as to why??
I've tried cooling the meringue, but that still doesn't help..

I have a four year old that has ssensory issues, and likes to chew on things. We have discovered he likes shewy foods like marshmallows and licorice, but gets too hyper if he has a lot of sugar. I need good ideas for chewy snacks that are healthy and low in sugar. I have explored the whole foods stores and considered items such as dried pineapple, papaya, mango, etc. The problem is the added sugar. I have settled for dried apples with the texture of marshmallows. All good ideas will be appreciated.
