Zest is the outermost portion of the peel of limes, lemons, oranges and other citrus fruits — but only the colored portion. The white part just underneath is called the pith, and is bitter. The zest contains aromatic oils that really boost the flavor in certain recipes.

It's also a brand of soap by Procter & Gamble that leaves no soap film (as in "zestfully clean"). Don't use this in cooking!

It's shavings from the peel of a citrus fruit, but you want to avoid the white pith, which is bitter. Avoid bottled zest. All the good oils have since dried up and it's usually expensive.
Keep a bowl of lemons in your house all the time. They're cheap and pretty and you'll tend to use them a lot more if they're around.
I've used a cheese grater in a pinch but the best thing to use is a microplane if you can get your hands on one.

The zest of a fruit (lemon, orange, lime) is just the outer peel, don't go to deep or you'll be pulling the bitter pith. Lemon or orange zest is so delicious when cooked into a homemade sweet potato pie.

Lightly grate peel from a lemon or orange..be careful not to get the white bitter part...Zest is where all the fruit oil and flavor is located.

Zest is a greenish soap found in the detergent aisle at the supermarket. Why would any one want to put soap in their food?
