Can I use Lambs liver ? After soaking in milk?Or duck livers-I find chicken livers very strong.But I dont think you guys in the States have Sheep therefore Lambs- Maybe I'm wrong.Do tell!!

We have both lamb and sheep, but the livers are not usually available. I would certainly think that you could substitute lamb livers for the chicken ones in the following recipe:

1 lb fresh chicken livers
3 tablespoons rendered chicken fat or butter or margarine
1 yellow onion, peeled and sliced
2 hard-boiled eggs, peeled
crispy fried chicken skin and fat (optional)
salt & freshly ground black pepper

Saute the livers in half the fat until they are no longer pink inside, about 5 minutes.

Remove from the pan and add the onion and the remaining fat.

Saute the onion until golden.

Grind the liver-onion mixture and the eggs using a coarse blade on your grinder.

Add the crispy fried skin and tiny pieces of crunchy friend chicken fat if you wish. Add salt and pepper.

Serve with toast points or crackers.

Suggestions:

Use the best and freshest butter you can get for optimum flavor and results. Schmaltz (the rendered oil from chicken fat) is traditional in this recipe, but it adds a lot of calories and cholesterol, to say nothing of extra work.

You can substitute crushed pork rinds for the fried chicken skin and fat (gribenes), but the taste won't be as good.

Chopped Liver in USA almost always is made w/ chicken livers. I wouldn't touch the stuff w/ a 10-foot pole (3 meter pole), but if there is a good recipe out there, this gal has it. I've never had one of her recipes fail! Chopped liver is traditionally a Jewish food.

I don't know about that other liver, But we use Chicken Liver's
My mom use's flour, Salt, & Pepper...Then she fry's them...
We also have Pinto Bean's, Kraut & Wiener's, Pone Bread, & Lettuce & Onion's w/bacon grease. With our liver's...

fried chicken liver. cow liver is difficult to get tender at home. lttle carton from grocery store. rinse. salt lightly. roll in flour. frying pan of hot grease. almost solid iron for your health!
