does anyone know how to make the white cheese dip... like the kind you order in mexican restaurants?

Queso Blanco Dip

32 oz Asadero or Queso; cubed
1/2 cup diced green chiles (if using canned, drain them first)
1/2 teaspoon cumin
1 tablespoon chile powder
1/4 cup onion, finely chopped
1 cup crema (sour cream)
1 red bell pepper, seeded, diced

Over a double boiler or in a crock pot, stir all ingredients except crema until cheese is melted. Immediately before serving, stir in crema.

Queso Blanco Mexican White Cheese Dip

1 cup monterey jack cheese or asadero cheese or chihuahua cheese, shredded fine
4 ounces green chilies
1/4 cup half-and-half
2 tablespoons onions, chopped fine
2 teaspoons ground cumin
1/2 teaspoon salt
1 serrano pepper, chopped fine (optional)
1 tablespoon fresh cilantro, chopped fine (optional)

Put all ingredients in a double boiler and heat on medium.
Cook until melted and well blended, stirring occasionally.
Serve with fresh tostadas or hot flour tortillas.

when you say most Mexican restaurants, you must be in the mid-West or the East. In the Western US white nacho sauce or Queso dip is almost unheard of. You are correct that it is just processed cheese melted into a sauce. here are some recipes from more to less authentic I also have seen White Queso dip velveeeta for sale.

HOT CHEESE DIP

2 oz. butter
2 tbsp. flour
1 clove garlic, crushed
3 oz. Scotch
2 oz. dry white wine
1 tsp. dry mustard
1/4 tsp. cayenne pepper
8 oz. Swiss or Gruyere cheese, grated

Over low heat, cook butter and garlic for a few minutes. Add flour and cook 3 minutes. Add Scotch a little at a time over low heat. Keep stirring (like making a Bechamel). Slowly add cheese, a wee bit at a time. Add white wine until it's come to the correct consistency. Keep hot over low heat. Serve right away, with French bread croutons, one inch squares, may be a little stale. Dip and eat. This is great for cocktail parties. Have a good time!

white cheese dip serves 10

INGREDIENTS

1/2 cup butter
1-1/2 cups shredded Monterey Jack cheese
1/2 cup sour cream
1 (4 ounce) can diced green chilies, drained

DIRECTIONS

Melt butter in a saucepan over medium heat. Reduce heat to medium-low, and stir in shredded cheese until melted. Mix in sour cream and green chilies, and cook, stirring occasionally just until heated through. Do not allow to boil.

its called queso - now that you know the name of it - look up a recipe online - there are a ton of variations - not just a recipe you can post on here : )
