I want to make a nice, summer-y and somewhat simple meal with seafood for my boyfriend this Tuesday. Personally I'm not crazy about most seafood so I'm not familiar with much of it, but I do know he loves salmon, lobster, crab, scallops, shrimp, calamari, and whitefish. I'd like to do some kind of pasta or rice as a side dish, along with a vegetable (he likes almost any kind). I'm up for suggestions though :) Also, I was thinking a nice Pinot Grigio would go well.

Any suggestions would be great :)

I'd like to bake the meatballs and place in crockpot til serving time. I'd like the sauce to not be sugary(jelly) or the barbecue kind. The recipe is for party meatballs, maybe some type of dry cheese in the meatballs? Any ideas? Cheese is not required... but looking for a low sodium recipe. Thanks

To save money, I'm reusing the pickle juice from some Clausen pickles and a fresh cucumber (sliced thin) to make my own pickles. My mother-in-law said they should only have to soak for 24 hours, but they still taste kind of cucumbery after 48 hours.

If I'm doing this right, how long do they need to soak? If I'm not, what can I do to make them pick up the flavor better?

There is a four hour rule for leaving food out, unrefrigerated?

I have taken safe food handling courses several times and at no time was I taught there is a four hour rule that food can sit without a heat source. Of iced down if serving cold.
Someone tell me where that comes from please?

These pies are about 1 1/2 times bigger than a standard meat pie you would get at a grocery store. I have 3 Chicken pies that come from KFC which were cooked and brought home hot. We couldn't eat them that day so we put them in the fridge. Since they've been previously cooked the crust is already brown. I can't microwave them because they are in an aluminum pie tin and the crust is only across the top of the pie only. If I were to put them in the oven at 350 degrees for 20 to 40 minutes I would anticipate the crust to go unacceptably dark. Am I right on this? Now what if I heat them at 250 degrees for a longer period? How would that affect it? Should I set them out to go to room temperature first and then heat it? What suggestions do you have?

I dont want to do slow cooker and it seems that is 85% of the recipes online or recipes that use things I've never heard of. I just want to make a simple roast dinner for me and mom. Mom is 84 so I would like for it to be very tender. HELP
