I dont want to do slow cooker and it seems that is 85% of the recipes online or recipes that use things I've never heard of. I just want to make a simple roast dinner for me and mom. Mom is 84 so I would like for it to be very tender. HELP

Sorry, but this 7 bone chuck roast can't be tender if it is cooked rare. It just won't work. This type of a roast should be cooked slowly over not over 325 degrees. Take you roast, put in a covered pan, salt, pepper and any spices you like. Add an onion or two, a potato or two, add one cup of beef bouillion. Cover and put in your preheated oven. Just check it every half hour or so. When ready this meat will almost fall apart it will be so tender. Remove the juice, and thicked with about 2 T flour for gravy. Serve. Believe me your mom will love it.

A 7-bone chuck roast will not be tender if cooked Rare.

Chuck = shoulder = tough since it's a working muscle on a beef steer. That's why it's sold as a pot roast. The long slow temperatures plus the moist cooking will help break down the tough muscle fibers. The good thing about the chuck roast is that it has a lot of flavor.

My suggestion is to cooking in a pot, simmered for 2 to 3 hours.
These vegetables are used to flavor the chuck roast.
garlic - 1 to 2 cloves
onion - 1 cut into big chunks
celery - 2 stalks cut into big chunks
carrot - 2 cut into big chucnks
thyme - half teaspoon
beef broth - 2 cans
packaged gravy mix

Add all but the beef to a pot and bring to boil.
Add the beef and turn down the heat so it simmers lightly.
cook covered for about 2.5 to 3 hours.

In the oven,
Add all the ingredients to an oven safe pot and mix.
Cover and back at 350F for about 2 hours.

Chuck roast is not a good choice for rare preparations. It's better cooked long and slow. You can do it on top of the stove in a yankee pot roast style or you can cook it in the oven. I would season the roast with salt, pepper and garlic. Then I would place it in a baking pan, put in carrots, onions and potatoes. Pour a combination of onion soup mix, water and maybe a small can of tomatoes or tomato sauce (the tomato products work on tenderizing the beef) Cook for a couple of hours at 350, until the meat is tender and cooked through. The next time, you can select a nice top round or rolled roast for a rare beef that is tender and juicy.

This time of year its hot as heck in south alabama,I would cook my roast by browning it real good all over and toss it in crock pot early in the morning say 9 am and put enough liquid in there to cover the meat and maybe an onion and some garlic gloves and let it go all day..It dont heat up the house at all, by supper time that meat is tender as butter..about an hour before I plan on eating I toss in some chopped taters

Ok, Here's the deal. When I cook any roast in my slow cooker/crock pot. I place the meat in place one can of diet coke or regular coke. Seasoned with desired seasoning and cook for 6 hours on high. When your ready to remove your roast be careful because it will fall apart when moving.

The words rare and pot roast do not go together. However, If that is what you want I suggest you marinate it for at least six hours (preferably over night) in what ever marinade you desire (italian dressing may be the best choice in this case) and then grill it to the temp you like. That is possibly the only way it will not be too tough to chew.

I would sear the outside quickly by putting the preheated oven on high broil for 7 to 12 minutes. Only cover the bone tips with tin foil. You don't want to burn the outside, instead you want to harden it. Then slow cook in a covered container, in a half inch of salty water with a sprig of rosemary. The slower the tenderer.

you're able to do it interior the oven or the crockpot. unload 2 cans of mushroom soup over the beef, & sprinkle with an envelope of dry onion soup blend. conceal & roast 325 for approximately 2 a million/2 hrs. or conceal & prepare dinner low for approximately 8 hrs. the two way, you will have fork-mushy meat & spectacular gravy. Make mashed potatoes, upload a veggie & a salad. How person-friendly is that??

Just don't cook it as long.

But you should know because of mad cow disease that no one should eat meat that hasn't been throughly cooked.

Yeah, I know, I loved my steaks, medium rare, but I don't eat them that way anymore.
