I'd like to bake the meatballs and place in crockpot til serving time. I'd like the sauce to not be sugary(jelly) or the barbecue kind. The recipe is for party meatballs, maybe some type of dry cheese in the meatballs? Any ideas? Cheese is not required... but looking for a low sodium recipe. Thanks

Take 1 can cranberry sauce and 1 jar of medium salsa and mix together in a saucepan and heat until cranberry sauce is melted. Then pour over meatballs in crockpot. Put on High for 3 hours, makes a very good sauce.

Italian Meatballs

Categories: Maindish, Beef, Italian

This is similar to the other meatball recipe I have, but without the sauce. They can be used in soup, over pasta or to make a meatball sandwich. We actually found this recipe years ago ... In fact we acquired it by copying it from a cookbook while standing in a grocery store. I seem to recall we were looking for a recipe to take to some get- together, and it's served that purpose many times over the years. The recipe has been modified to reduce the sodium, eliminating the salt and changing garlic salt to garlic powder, and using homemade bread. Baking the meatballs is much easier than frying them. And they don't fall apart from the handling.

1 1/2 lb Beef,Ground
1/2 c Egg Substitute
1/4 c Parmesan
1/2 t Garlic Powder
1 T Parsley
1/2 T Oregano
4 sl Bread,Crumbled
3 Onion,Chopped

Combine beef, egg, cheese, seasonings and bread. Form into 1 inch balls. Bake at 375 for 30-40 minutes, turning once. Drain on paper towels.

Yield: 6 Servings

for sauce make it in mushroom soup if you dont liek the others ;
or pour in a small jug of V 8 juice and let it simmer in that with onion ,green peppers ,garlic

First recipe is for a savory sauce. Use lo-so canned ingredients for it. The second is a recipe for meatballs ... just use the savory sauce on them.

Swedish Meatballs in Sauce

1 (1 lb.) pkg. frozen plain meatballs (not the Italian kind)
1 can cream of mushroom soup
1 can French onion bouillon (or 1 cup beef bouillon)
1 cup sour cream
1 tsp. Worcestershire sauce
1 dash Tabasco sauce
1/4 cup milk
Cracked black pepper

Mix sauce ingredients together and mix in meatballs. Cook on low until heated through. Serve with noodles or rice.

Meatballs

1 lb. Ground Beef
1/2 lb. Ground Pork or Veal
Salt & Pepper to taste
1 or 2 Cloves Garlic, Minced
2 Tbsp. Fresh Chopped Parsley
2 Tbsp. Grated Parmesan Cheese (<--high in sodium, may want to use ½)
1 Egg
1 Cup Soft Bread Crumbs
1/2 Cup Water

Add the bread crumbs to the water to moisten. Mix all the ingredients together with the bread crumb mixture. Shape into golf ball sized balls, and gently drop into the simmering sauce.

Easy sauce recipe:
Use one bottle of low-sodium barbecue sauce
One can of low-sodium cream of mushroom soup
Put in crockpot with meatballs and heat on high until it's all heated through. I usually use frozen meatballs, but if you're trying to do low sodium, maybe you could make your own with just ground beef, salt-free seasoning, egg(s) and a little bit of bread crumbs and then bake. (then add to sauce in crock pot and heat and serve!)

I answered on your other one in the other section but figured I'd post here too since more of my contacts are on this one! p.s....that turkey and mushroom recipe looks awesome! Great question! I love cooking and using my crockpot too! A few recipes I like are: Roast Beef garlic mushrooms packet of onion soup mix bottle of beer or can of ginger ale (I've only done the ginger ale) Cook until tender then use 2 forks to pull it apart. Serve with whatever sides you like then use the left overs the next day for yummy steak subs. Sorry had to find my other recipe Chili ground beef or turkey chopped green pepper chopped onion loads of mushrooms can of kidney beans 2 jars chili sauce 2 cans diced tomato (or use fresh) 1 jar tomato paste (if too thin for your liking) or tomato juice (if too thick for your liking) season with chili powder, garlic, cumin, salt and pepper brown your meat then add everything to the slow cooker. Let cook on low for the day or high for a few hours. Serve with some cheese and sour cream on top. Yumm! Jambalaya chicken breast cubed sausage diced cooked shrimp 1 can diced tomato green pepper diced onion diced celery chopped 1 cup chicken broth oregano, bay leaves, garlic, salt, pepper, cajun, thyme seasoning Add everything to slow cooker except for shrimp. Cook low for about 6-7 hours or high for 3-4 hours. Add shrimp about 5 minutes before serving. Serve over rice or with pasta. Throw out bay leaves before serving too. I love this recipe with noodles!
