This was a recipe for spinach frittata printed on one of those back pages made of cards with recipes and hints and things on them. It was in an issue published within the last year, so no heavy research required. I'd like to make this iron-rich recipe, but have lost the paperchka.

Thanks favorite_aunt24 but that's NOT the magazine recipe... unfortunately, that one includes neither red peppers nor chicken.

Spinach Frittata

INGREDIENTS

1/2 cup julienned sweet red pepper
1/2 cup chopped onion
2 tablespoons olive or vegetable oil
3 eggs
1/2 cup milk
1 cup chopped cooked chicken
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1/2 cup shredded mozzarella cheese
1 tablespoon grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper

DIRECTIONS

In a skillet, saute the red pepper and onion in oil until tender. In a bowl, beat eggs and milk. Stir in chicken if desired, 1/2 cup spinach, mozzarella and Parmesan cheeses, salt and pepper (save remaining spinach for another use). Add to the skillet. Cover and cook over medium heat for 7-10 minutes or until completely set. Cut into wedges.
