BAKED SPINACH WITH CHEESE
1 pound fresh spinach
1/4 pound butter
1 onion, diced
2 cloves garlic, minced
1/2 teaspoon, salt
1/2 pound Emmenthaler cheese, grated
1 teaspoon paprika
1/8 teaspoon nutmeg
1/4 teaspoon pepper
Wash and clean spinach of sand. Dry. Chop spinach into strips.
In a large Dutch oven, heat butter until bubbly. Add onion and garlic, saute for 2 to 3 minutes. Add spinach. Sprinkle with salt. Cover and steam for 5 minutes.
Remove from heat. Butter an ovenproof casserole. Sprinkle half the cheese over the bottom of the casserole. Add the spinach. Sprinkle with paprika, nutmeg, and pepper.
Top with remaining cheese.
Bake at 360°F about 20 minutes or until cheese bubbles.
GARLIC-GRILLED SPINACH PIZZA WITH
CHICKEN
1 Pillsbury All Ready pizza crust
1 1/2 cups tomato sauce
2 tablespoons Parmesan cheese
8 oz. Mozzarella cheese
1/2 lb. thinly sliced chicken breast strips
1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
1 tablespoon olive oil
1 teaspoon garlic, minced
1/4 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/2 teaspoon extra spicy Mrs. Dash seasoning
Preheat oven to 425°F degrees.
Baste chicken with olive oil, sprinkle with garlic powder and grill on high heat (or, if you are cooking indoors, use a broiler or grill pan.
Turn once to cook evenly on both sides. Coat chicken in spinach and bake until spinach is almost crisp. Set aside; cover and keep warm over very low heat.
Roll out pizza crust on a pizza pan sprayed with olive oil spray. Spread sauce, sprinkle on cheeses and seasonings.
Bake for 12 to 15 minutes.
Top with grilled chicken and spinach.
Cooks Note: Pizza can be baked on a pizza stone in the gas grill. This is an excellent method of baking during Summer when you don't want to overheat the kitchen. Any bread or pizza dough can be substituted for the All Ready Pizza Crust when you have the time to bake from scratch.

You can use your favorite recipe for pizza dough or purchase some already made.Next cook a bag of frozen spinach in the microwave for 10 minutes.I cook it right in the bag and the plastic never melts or anything.Next,heat some olive oil on the stove and add the spinach with either sliced or minced garlic.You can eat it this way and it`s great,or you can take the pizza dough and roll it into a rectangle on a lightly floured surface.Take some spinach and mozzarella cheese and place down the middle leaving enough room to roll it up. you can either roll it like a cinnamon bun recipe or make it into a loaf.Bake it in the oven at 350 till it`s browned.You can brush it with an egg wash if you want a darker brown color.

Chicken Manicotti
Ingredients
1/4 cup Dried Tomato & Garlic Pesto Mix
4 cups cooked, chopped chicken
2 (8 oz.) containers chive and onion cream cheese
10 oz. frozen chopped spinach, thawed and squeezed dry
2 cups shredded mozzarella cheese, divided
8 oz. prepared manicotti pasta
2 jars Romano cheese pasta sauce
Directions
Combine first 4 ingredients and 1 cup mozzarella cheese. Cut pasta shells down the sides and fill each with 1/2 cup chicken mixture. Roll; place into greased 11 x 17 baking pan. Pour sauce over top; sprinkle with remaining cheese. Bake at 350° for 30 minutes. Makes 4-6 servings.

Two changes to the recipe - I use an oil spray instead of butter on the phyllo and mix the feta with some tasty cheese.
It's also nice as a stuffing or a side with Salmon. Wilt the spinach, add sun-dried tomatoes, pine nuts and basil pesto - heat through. If your using it as a stuffing - make a pocket half way down the salmon fillet and bake for approx 20mins at 350F.

I am the same way and can't really find recipes I like!! I love spinach artichoke dip, but don't know where to get a good recipe. One thing I like to do is to drain some spinach and mix it with cream cheese, parmasean cheese, and garlic salt, then spread it over some chicken breast and bake until the chicken is cooked. It's easy and yummy!

Lamb Shanks: -Roasted* (By Dune 7/10/08) Colour 4 Lamb Shanks in some oil in a frying pan and transfer to an oven dish. (One at a time) Drain pan and soften some onions and garlic, de- glaze using a little water and get all those pieces that remain and add some stock or stock cubes. Pour stock over shanks and cover, place in a hot oven. (Preheated to maximum) When the oven regains temperature, cut back the heat to 165C. (320F) Cook for about an hour, turning the shanks a couple of times. Serve with mashed potatoes, steamed minted green peas and mashed carrots and parsnips. (This is a delightful change) Use bottled mint sauce or makes your own, or pan gravy to finish off an easy cook meal.

Hot Spinach Artichoke Dip
½ c. sour cream
½ c. mayonnaise
½ c. grated parmesan cheese
½ c. cubed mozzarella cheese
1-2 tsp minced garlic
1 – 10 oz. package frozen chopped spinach, thawed and squeezed of its juices
1 – 14 oz. can artichoke hearts, chopped
1 tomato, seeded and finely diced
Combine all ingredients except tomato and place in shallow casserole dish. Bake at 325 for 15-20 minutes. Sprinkle top with chopped tomato. Serve with tortilla or pita chips!

Even if you don't like spinach, you will love this creamy rice dish.
Spinach Rice
INGREDIENTS
1/3 cup uncooked long grain white rice
2/3 cup water
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
1/4 cup milk
2 fresh jalapeno peppers, seeded and chopped
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons butter
1/2 cup chopped onion
1 (10 ounce) package frozen chopped spinach, thawed and drained
4 ounces processed cheese food, cubed
DIRECTIONS
In a pot, bring the rice and water to a boil. Cover, reduce heat to low, and simmer 20 minutes.
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
In a bowl, mix the soup, milk, jalapeno peppers, salt, and pepper.
Melt the butter in a large skillet over medium-low heat, and cook the onion until tender. Mix in the cooked rice and spinach. Pour the soup mixture into the skillet, and continue cooking until heated through. Mix in the cubed processed cheese, and transfer to the prepared baking dish.
Bake 25 minutes in the preheated oven, until bubbly and lightly browned.

I love spinach Knishes, This Recipe is a bit of work BUT soo worth it.
Knishes, Potato-Spinach-Cheese
Yield: 1 dozen
4 medium baking potatoes
3 eggs
2 bunches (20 ounces) spinach
2 tsp. baking soda
A dash of salt
3 cups Mozzarella, shredded
3 cups Cheddar, shredded
2 cups feta cheese
1 package puff pastry dough
Egg yolk
Boil potatoes until soft but not soggy. Mash potatoes well. Let cool.
Beat in 3 eggs into the potatoes. Mixture should be smooth. Let rest.
Chop and fast fry spinach until soft. In a large bowl stir together potato mixture with spinach, baking soda, salt, and all three cheeses.
Lay out puff pastry. Cut into 8" squares. Place 1/3 cup of potato, spinach and cheese mixture into the middle of puff pastry square. Place square in a diamond shape. Take one corner of the puff pastry square and fold over the mixture to the other corner. Take a knife and roll up the edges of the pastry dough so it forms a fluted ridge preventing the cheese mixture from leaking out.
Brush egg yolk on top. Put pastry in oven at 375°F until golden brown.
Variation:
Use filo/phyllo/fillo dough instead puff pastry dough for an authentic Greek style snack. Spread melted butter in-between three filo sheets. Cut the sheets into squares, placing the cheese mixture in the middle of each square. Fold squares over the mixture. Bake at 375°F until golden brown.

Tortellini Soup
Ingredients
4 cups chicken or veggie broth
1 large can chunk-style crushed tomatoes
olive oil
garlic - lots of it
1 pound spinach
Hot sauce to taste
1 pound tortellini
Instructions
Sautee garlic in oil 2 minutes. Add spinach cook about 3 minutes. Add chicken broth and tomato sauce cook 15 minutes. Add hot sauce to taste. Bring to boil, add tortellini, and cook till done. Do not add salt, but if needed, put in before tortellini. Enjoy!

take a package of frozen spinich and thaw it. Toss it in a pan with a 1c of cream add some garlic and white white. Sherry works best. if u can get ur hands on "Pernod" a liqour use an ounce of that as well. grind up some salt and pepper and let the cream simmer into the spinich.
This is basically the spinich topping used in oysters rockafeller. Its perfect with bread or crackers by itself or great on oysters with a bit of bernaise sauce. enjoy.
