I run a restaurant and we have a christmas banquet tonight- i have lost my recipe for champagne chicken- all i remember is that i have to bake it---how long? ingredients?

I know this is a dumb question but... you know the muffin mix that you only have to add 3/4 water or milk and 1 egg too? Well...my question is what is the shelf life...how long could it good for?
I found a box of it and the box and the can of real blueberries inside both say "distributed by Aroura Foods 1998" so I assume I got it in 1998 and forgot about having it. Should I even try making it... are things like that non-perishable.... the mix is sealed in a bag and the berries are in a sealed can.
I wanted to ask before I made it or threw it out.

I was in a hurry last night at the grocery store and was meaning to pick up cream cheese and I woke up this morning to make a cheesecake and the box reads "1/3 less fat than cream cheese" then underneath it says Neufchatel cheese....does anyone know what this is and if it will make a cheesecake? I put it in the oven and it still hasn't set yet.....

I want to put rum flavor in my cheesecake recipe, but I am afraid of putting too much liquid. How much could I add without messing up the cheesecake? I know I can use rum extract, but using real rum makes a big difference. Thanks :)

I am doing Christmas dinner for a big group and have 3 teenagers to cater for aswell who are very fussy and two of which dont each much. Iam am doing Pate for the grownups which i know they wont eat and dont particularly want to give them soup as i know they wont eat anything else then, just want soemthing light but simple..
