yes. It will smell bad and taste like someone has soaked cardboard in it. Store your olive oil in a cool dark place to help prevent rancidity. Do not refrigerate as it will go solid and you will have to warm it every time you want to use it.

Yes. But olive oil is more stabil than other oils. You will be able to smell the rancidity in oil. Exposure to air and light will speed up the process.

yes it does, all oils go rancid. you will be able to tell as it gets a horrible smell (not like the clean sweet smell of fresh olive oil) if it goes rancid toss it out as the taste of the rancid oil will get into your food
