In some of the tiramisu recipe, the egg whites are required to be beat until 'stiff peak' forms. What does this mean? Is it Foamy?

I have a electric smoker with electric heat element at the bottom. A bowl above the element that you fill with water, pinnapple juice, orange juice etc to help flavor. The cooking temperature is 195 to 200 degrees f. I cooked 2 racks of baby back pork ribs for 5 hours. They tasted great but was not as tender as I thought they should be.
I have eaten ribs cooked by some of my friends that would fall apart without pre-boiling.
I was wondering if cooking them longer would have made them more tender? The ribs were not dried out, just not as tender as I would have liked.
Anyone have any ideas or solutions they would like to pass on for making them more tender?

Everytime it gets wet and the water sits, the water turns orange and rusty. After cleaning and a paper towel wipe down, it still shows some orange on the towel. Shall I ditch it? Thanks in advance!

2 ripe avocados
½ red onion, minced (about 1/2 cup)
1-2 serrano chiles, stems and seeds removed, minced
2 tablespoons cilantro leaves, finely chopped
1 tablespoon of fresh lime or lemon juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
1/2 ripe tomato, seeds and pulp removed, chopped

That's my recipe, I added a bit more lime juice, but it's still bland, plenty spicy, but no zip. Should I add garlic?
