Oatmeal Cookies from The New Farm Vegetarian Cookbook
1/2 cup margarine
1/3 cup vegetable oil
1 cup brown sugar
1 cup white sugar
1/3 cup soy milk (water or cows milk are also fine)
2 teaspoons vanilla
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 cups rolled oats
1/2 cup raisins (optional- chocolate chips/nuts are also good)
Cream together margarine and oil, cream in sugars. Add soy milk and vanilla. Mix until smooth. Mix in flour, soda, baking powder, and salt. Add oats and the rest and blend well.
Bake at 350 degrees for about 15 minutes or until the undersides just start getting brown. (use parchment paper or grease the cookie sheets).
These cookies are fool proof. It makes about 5 dozen cookies so you might want to cut the recipe in half. I like to make giant cookies out of this. If you overcook them they get crispy. I prefer to cook them per the instructions because they stay softer. (cooled and stored in a plastic container.)

Easy Peanut Butter Cookies
1 14 oz can sweetened condensed milk
3/4 cup peanut butter
2 cups biscuit mix
1 teaspoon vanilla
Beat milk and peanut butter until smooth. Add biscuit mix and vanilla. Shape into 1 inch balls, place on ungreased baking sheet, flatten with a fork. Bake 6-9 minutes at 375.
No bake chocolate oatmeal cookies
2 cups sugar
4 to 6 tablespoons cocoa
1/2 cup milk
1 stick margarine
2 tsp vanilla
mix these ingredients and bring to a boil and boil for 1-1/2 minutes. Remove from heat and stir in 2-1/2 cups of quick oats and 1 cup nuts (opt). Drop by teaspoon on wax paper and allow to harden. I have had these with peanut butter in them, but I am not sure how much you would add, I would guess about 1/2 cup.

Peanut Butter Oatmeal No Bake Cookies (No Wheat / No Egg)
12 cookies
3 cups old-fashioned oatmeal (dry, sometimes takes more oatmeal)
5 tablespoons peanut butter (reduced fat works great)
2 teaspoons vanilla
2 cups brown sugar
1/2 cup milk (Non fat works great)
1/4 cup butter
Mix together the first three ingredients. Set aside.
Stir together sugar, milk, and butter in Medium saucepan. Cook over medium heat stiring occasionally - full boil for ONE minute.
Immediately pour over oatmeal mixture and stir thoroughly but rapidly.
Spoon cookie size scoops (a heaping Tablespoon) onto waxed paper or plastic wrap and let set until firm.

Jumbo OatmealPeanut Butter Cookies

1 caton egg beater( non egg product)
1/4 cup milk
1 tsp vanilla
2c flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 1/2 c oatmeal
1 c raisins
cream together butter, peanut butter, and sugar until smoothand creamy, add egg beaters,milk and vanilla blend well, add flour, soda,salt and cinnnamon,stir into creamy mixture, blend in oats and raisins, drop by tablespoon on to greased cooky sheet and bake at 350 for 15 minutes or until done,(makes 36(3inch) cookies.

Take any recipe that calls for eggs and substitute 1 heaping tablespoon of plain yogurt per egg. This works on almost all recipes, except meringues. I've also substituted cottage cheese in some cake recipes...makes it very rich.
