Make a panini style sandwich, it's very easy and even a college student will have the basic equipment.
Decide on the sandwich type for example, sliced turkey with provalone or brea cheese. Add veges such as lettuce, tomato.
Make a sandwich then put into oil or buttered frying pan. Place another frying pan or some heavy weight on top. NOT A closed can, it can explode from the heat! Cook away until the cheese melts. The weight on top will blend everythint together. You can also buy a panini machine for less than $100.00. You can adapt any sandwich to this.

the best pasta meal ever eaten by a college student:
1 pound ground sirloin, ground turkey, or 1 bag frozen meatballs
1 onion
1 clove garlic
1 jar or can anybody's red marinara sauce (I like Muir Glen or Trader Joe's best)
1/4 cup red wine
1 pound bag of pasta
Brown meat, onions, and garlic, or warm meatballs. Add sauce and wine. Simmer for as long as possible.
Cook pasta according to package instructions in the biggest stockpot the students have. 8 to 10 quarts is the smallest they ought to try.
Drain the pasta in a collander. Put some sauce in the pot, add the pasta back to the pot. Toss.
Add more sauce, toss again. Pass extra sauce as needed.
Quesadillas:
pre heat a griddle
slice cheddar cheese
slice up cooked chicken or beef
place a tortilla on the griddle, add cheese in a layer, then the meat, sprinkle on cumin or add salsa, cover with another tortilla. When the cheese begins to melt, flip to warm the top side.
Cut into wedges; dip into sour cream or salsa to eat.

Heres a great one...I too am a young male when I was out on my own...it depends on what he likes but real easy to make a great sandwhich for any munchie occasion. I personally like a big sandwhich so I would take a bagel like Thomas' toast it...while its toasting get some cheese and ham ready a piece of cheese with three pieces of ham somewhat folded over two if its thick (but better when thin) put another piece of cheese over that then two more pieces of ham and a piece of cheese on top some brown mustard on the bagel...put it in the microwave for like 15-20sec till the cheese melts push it down and enjoy it's the bomb...and quick as anything to make.

Beef and Noodles are fairly easy and can last a while in a fridge.
Cook up a pound of ground beef and drain.
Take a couple of large cans of beef broth soup and combine with some uncooked egg noodles in a medium pan (or microwave bowl) and cook following the directions on the back of the noodle package. (Use the directions for cooking the noodles but substitute the beef broth for the water).
After cooking, add the cooked ground beef and simmer on low for about 5 or ten minutes and serve.

I just take an iron supplement so I don't have to worry about the iron content of what I eat (iron was an issue for me even before I became vegetarian). As far as protein, beans are a really great and quick source for protein. Nuts are also good too. Tofu is a great source of protein, but it usually requires extra time if you actually want it to taste like anything since it has to marinade.

Quesedillas. Take two buttered flour tortillas(buttered side down, grate whatever cheeses you like, dice your favorite stuff like jalapenos, tomatoes, mushrooms, chicken, pork, beef or anything else you want. If you are on a college budget, you can make them with just cheese. Throw your other tortilla, buttered side up, on top of all that, flip it over and brown it too. Then you can put hot sauce, salsa, picante sauce, sour cream or anything you want on it. Cut it up like you would a pizza. You can also put whatever you want between two tortillas along with grated cheese and pop it into the microwave.

CHICKEN MARSALA - In a frying pan, butter (melted) sliced mushrooms (Lots). cook until mushrooms start to soften. In a second frying pan cook Chicken (boneless, cut into pieces or strips and coated with flour) in butter, until edges on all sides start to brown. In first frying pan, add finely diced garlic and a generous amount of Marsala wine to mushrooms and heat vigorously for about two minutes, add chicken from second frying pan and cook until sauce thickens (flour from chicken will thicken sauce). To finish, add a spritz more Marsala wine (important, to sharpen Marsala flavor) and serve. - ENJOY
