Creamy Pumpkin Soup - for weight watching people

2 teaspoons margarine
1 cup chopped onions
3/4 teaspoon dried rubbed sage
1/2 teaspoon curry powder
1/4 teaspoon ground nutmeg
3 tablespoons all-purpose flour
3 (10 1/2 ounce) cans low sodium chicken broth
1 tablespoon tomato paste
1/4 teaspoon salt
3 cups cubed peeled fresh pumpkin, Can substitute canned pumpkin (about 1 lb)
1 cup chopped peeled macintosh apples or other sweet cooking apples
1/2 cup evaporated skim milk
sage sprigs (optional)

Melt margarine in a Dutch oven over medium heat.
Add onion: saute 3 minutes.
Add sage, curry powder, and nutmeg; cook 30 seconds.
Stir in flour; cook 30 seconds.
Add broth tomato paste, and salt, stirring well with a whisk.
Stir in pumpkin and apple; bring to a boil.
Cover, reduce heat, and simmer 25 minutes or until pumpkin is tender, stirring occasionally.
Remove from heat; cool slightly.
Place mixture in a blender or food processor; process until smooth.
Return mixture to Dutch oven; add milk.
Cook until thoroughly heated.
Garnish with sage sprigs if desired.

I love pumpkin soup made with curry.
I don't use a recipe, just cook some onion and curry powder in butter, add enough flour to make a roux, then add some milk, cream or chicken broth and some pumpkin puree. Fantastic.

Pumpkin Pie!!!!

It's a little bit more work than using canned pumpkin, but it is SO worth it!

Pumpkin Cookie Recipe


INGREDIENTS:
1/2 cup butter, room temperature
1/2 cup granulated sugar
1/2 cup light brown sugar, firmly packed
1/4 cup molasses
1 egg
1 cup pumpkin purée, canned or homemade*
2 cups all-purpose flour
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 cup milk
sifted confectioners' sugar, for dusting
PREPARATION:
In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in molasses and egg. Stir in the pumpkin purée. In another bowl, sift together the flour, baking soda, cinnamon, and nutmeg.

remove the goop from the seeds
add a little butter and salt and cook in a 350 oven for 15 mins or until they are light brown

you can boil the meat of the pumpkin to soften it and then use it to make pumpkin muffins or cookies YUM! :)

Pasta with Creamy Pumpkin Sauce:
1 pkg. (16 oz.) penne pasta, uncooked
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
1/2 cup KRAFT 100% Grated Parmesan Cheese
1/2 cup (1 stick) butter or margarine
1/2 cup milk
1 cup canned pumpkin
1/2 tsp. ground red pepper
Ground nutmeg to taste



COOK pasta as directed on package.
MEANWHILE, place cream cheese, Parmesan cheese, butter and milk in large saucepan; cook on low heat until cream cheese is melted, stirring frequently. Add pumpkin and spices; cook until heated through, stirring occasionally.
ADD pasta; toss lightly. Serve topped with additional Parmesan cheese, if desired.

I make it every Halloween as a fun little tradition and my family loves it!

You can make pumpkin bars,pumpkin pies,pumpkin pancakes,pumpkin soup,pumpkin icecream etc...Plus pick all the seeds out and bake them.Pumpkin Seeds are good for you.
