I'm not a huge fan of Emeril's either. My friend from the Food Network (prep cook, no one famous) told me he was lecherous.
That being said, he has restaurants all over the country that are top notch. His shows are highly rated and he has done some charity work for the relief efforts of Katrina and the World Trade Center.

Emeril was the first tv chef that could pull off being a man's man. He helped rid food tv shows of the julia childs / Martha Sturart image and put a guy on the tube who was saying "guys at home you can do this and BAM! you can cook it like you like it"

I think mostly what he added is that he got people interested in cooking that probably weren't before. Because of his TV personality it makes people want to watch, and then eventually learn. Also, his style of cooking, New Orleans often, is something no other celebrity chef really reaches in to, but he has brought some of these dishes to main stream America.
