Every time I boil raw nuts the darn things turn dark brown and that also ruins the taste! How do you boil peanuts and keep them their natural whitish color?

No one in my family llikes the sweet peppers, yet every recipe seems to ask for them because of crunch, color, etc. I want items than can be used in place of them. I use water chestnuts sometimes, but they don't have color. No one likes celery in my family either!

Why is it ok to eat rare beef, but chicken and pork must be fully cooked to avoid salmonella poisoning? Does beef not harbor this bacteria? If so, why?

He hates fish, but he has never really had it either except for fish sticks as a kid. I want to make some fish tonight and need ideas for a good introduction for him to fish. What kind do you suggest... It all tastes good to me and I am not sensitive to the fishy taste people always talk about so I need an unbiased opinion! Any suggestions or ways to prepare so he won't be turned against it forever would be appreciated!
