Apple Cinnamon Pie
1 1/2 lb red delicious apples -- peeled, cored, cut in 1/4 inch slices (about 4 1/2 cups)
1 1/2 lb Golden delicious apples -- peeled, cored, cut in 1/4 inch slices (about 4 1/2 cups)
1/4 cup sugar -- plus 1 tablespoon
1/4 cup all-purpose flour
3 1/2 tsp ground cinnamon
1 tbsp cider vinegar
1/2 tsp salt
1 pie crust -- double crust
1/4 cup honey
1 tbsp milk
Position rack in bottom third of oven and preheat oven to 400° F. Combine sliced apples, 1/4 cup sugar, flour, 2 teaspoons ground cinnamon, vinegar and salt in large bowl; toss to blend.
Roll out 1 dough disk on lightly floured surface to 13-inch round. Transfer to 9-inch-diameter deep-dish glass pie dish. Trim overhang to 1/2 inch. Brush edge of crust lightly with water. Transfer apple mixture to crust, mounding in center and pressing lightly to compact. Drizzle with honey. Sprinkle with 1 teaspoon cinnamon. Roll out second dough disk to 13-inch round. Place atop apples. Trim dough overhang to 1 inch. Fold top crust edge under bottom crust edge, pressing to seal. Crimp edge decoratively. Cut several slits in crust to allow steam to escape.
Place apple pie on baking sheet. Bake 45 minutes.
Combine remaining 1 tablespoon sugar and 1/2 teaspoon ground cinnamon in small bowl. Brush top crust of pie with milk. Sprinkle with sugar mixture. Bake until crust is golden brown, apples are tender and juices bubble thickly, covering crust edges with foil if browning too quickly, about 20 minutes. Transfer pie to rack and cool.
Cut pie into wedges and serve with vanilla ice cream.

This recipe works best with a tart apple. Cut, and peel the apples. In a large non-stick frying pan, add a little butter and add the apples. On top of the apples put a handful of brown sugar, some nutmeg and some cinnamon. You can also add a bit of pancake syrup to this. Cover and let them cook down to almost mush. Remove the cover and let cook to thicken a bit....this is the best stuff spread on top of a hot homemade biscuit. Or try it on vanilla ice cream, or as a topper on pancakes and waffles. Keeps in the fridge well. Just zap it in the microwave when you want to use it.

APPLE ROLL - UPS
2 cooking apples, sliced into 8 pieces each
1 pkg. refrigerator crescent rolls
1/2 c. sugar
1/2 tsp. cinnamon
1/4 c. orange juice
2 tbsp. melted butter
Peel, core and cut apples. Open crescent rolls and roll out dough. Cut each triangle in 1/2 so you have 16 triangles of dough. Roll 1 slice of apple into each triangle of dough. Combine the sugar and cinnamon and sprinkle on apples. Place seam side down in a pan. Drizzle dough with melted butter. Pour 1/4 cup orange juice into bottom of pan. Bake until golden brown approximately 30 minutes at 400 degrees.

Apple Brownies
1/2 cup shortening
1 cup sugar
1/2 tsp. vanilla
2 eggs, beaten
1 cup flour, sifted
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 1/2 cups finely grated apples
1/2 cup chopped nuts
Melt shortening and beat in sugar and vanilla. Stir in eggs.
Sift dry ingredients together and add to shortening mixture. Stir in apples and nuts.
Spread in greased 9 in. square pan. Bake at 350 for 30-35 minutes. Cut while warm into 2 inch squares. This makes about 16 squares.

3/4 c All-purpose flour
2/3 c Butter or margarine,softened
1/3 c Firmly packed brown sugar
1 Egg
1 ts Vanilla
1/2 ts Cinnamon
1/2 ts Baking powder
1/2 ts Salt
1 1/2 c Quaker Oats, uncooked
1 cup Shredded Cheddar cheese
3/4 c Raisins
1 c Chopped apple
Combine flour, butter, sugar, egg, vanilla, cinnamon, baking powder and salt in large bowl, mix well. Add oats, cheese and raisins, mix well. Stir in apple. Drop by heaping tablespoons onto ungreased cookie sheet, bake in preheated oven to 375 degrees 15 minutes or until golden brown. Store in tightly covered container in refrigerato or in loosely covered container at room temperature
Spicy Apple-Oatmeal Bars
3/4 c All-purpose flour; sifted
3/4 ts Baking powder
1/2 ts Baking soda
1/2 ts Cocoa
1 ts Ground cinnamon
1/2 ts Ground nutmeg
1/4 ts Ground cloves
1/3 c Shortening
3/4 c Granulated sugar
2 Egg
1 c Rolled oats
1 1/2 c Apple, peeled & diced
1/2 c Walnuts, chopped
Confectioner's sugar to decoration
Preheat oven to 375 degrees . Lightly grease a 9-by-9-1-3/4-inch baking pan. Sift flour with baking powder, soda, salt, cocoa, cinnamon, nutmeg, and cloves, set aside. In a large bowl of electric mixer, beat shortening with granulated sugar until light and fluffy. Beat in eggs, one at a time, beating until very light and fluffy. At low speed, beat in flour mixture just until combined. Then, with spoon, stir in oats, apple and the chopped walnuts. Turn mixture into prepared pan. Bake 25 minutes, or until test done. Let cool completely on wire rack. Sprinkle with confectioner's sugar. Cut in bars
