Lemon Cream Cupcakes recipe

3/4 cup (1 1/2 sticks) unsalted butter, softened
1 1/2 cups granulated sugar
6 large eggs
1/4 cup fresh lemon juice
2 1/4 cups cake flour or all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon grated lemon zest
3/4 cup cream cheese, softened
confectioners sugar, for dusting, optional

Preheat oven to 350 degrees F. Line muffin tin with cupcake paper.

Combine the butter and 1 1/4 cups of the sugar in a large bowl and beat with the mixer on medium/high until fluffy.

Add the eggs and 3 tablespoons of the lemon juice and beat until well combined, scraping down the bowl once or twice as necessary.

Mix in the flour, baking powder, salt and 2 teaspoons of the lemon zest until just combined.

In a small bowl, mash together the cream cheese and remaining 1/4 cup sugar, remaining 1 tablespoon lemon juice and remaining 1 teaspoon lemon zest until combined.

Spoon about 3 tablespoons of the batter into each muffin cup. Place about 1 tablespoon of the cream cheese mixture on top of each portion of batter and cover the cheese with some of the remaining batter (the batter should reach 3/4's of the way to the top of each cup).

Bake until golden, about 20 minutes. Let the cupcakes cool in the pan for 10 minutes before turning over onto the wire rack to cool completely. Use a sifter to sprinkle confectioners before serving.

8 ounces cream cheese, at room temperature
2 1/2 cups sugar
Salt
1 large egg
6 ounces semisweet chocolate chips
2 1/4 cups flour
1 1/2 teaspoons baking soda
1/4 cup plus 2 tablespoons unsweetened cocoa powder
1/3 cup plus 3 tablespoons vegetable oil
1 1/2 teaspoons apple cider vinegar
1 1/2 teaspoons pure vanilla extract







1. Preheat the oven to 350°. Line two 12-cup muffin pans with paper or foil baking cups. Using an electric mixer, combine the cream cheese, 1 cup sugar and 1/8 teaspoon salt. Add the egg and mix well. Fold in the chocolate chips and set aside.
2. In a large mixing bowl, whisk together the flour, the remaining 1 1/2 cups sugar, 3/4 teaspoon salt, the baking soda and cocoa powder. Add 1 1/2 cups water, the oil, vinegar and vanilla and stir until smooth.
3. Fill each baking cup two-thirds full with the cake batter and top with 1 tablespoon of the cream cheese mixture. Bake until the edges are firm to the touch, about 25 minutes.

i found the perfect recipe on recipezaar.. search for cupcakes and select the one which uses 24 ounces of icing sugar (25 servings)
