No one in my family llikes the sweet peppers, yet every recipe seems to ask for them because of crunch, color, etc. I want items than can be used in place of them. I use water chestnuts sometimes, but they don't have color. No one likes celery in my family either!

Tomatoes and radishes, pomagranite seeds and beets are good for red.
Yellow crookneck squash, and corn for yellow.
Carrots, sweet potatoes and pumpkin for orange.
And last, for green Broccoli, Kale, Romaine lettuce, Bok choy, Zucchini, Collard greens, Brussel Sprouts, Turnip, tomatillos, Spinach, Asparagus, Celery, Cucumbers, Cabbage, Artichoke, Okra
And don't forget you can add colorfull fruits to any dish.

You may be able to add some sort of nut depending on the recipe, diced fresh onions have a crunch, tomatoes, apples, pears, bananas,carrots, papaya, mango, so may fruits and veggies add color. don't be afraid to experiment with just yourself then mask them to try it! cooking's fun!
