You might want to start him off with a mild one such as tilapia or whiting. Save "fishy" fish for later like tuna or salmon. My husband and I are big fish eaters. I'm always looking for new recipes. I swear by www.allrecipes.com . They have so many recipes to choose from for so many types of fish. Good luck!

I hate to tell you that if he can't stand the fishy taste, he just isn't going to like it. They are tasting something different from you and me. My Dad is like that. So was his Mom. It's an enzyme thing, I think (just like for some of us, cilantro tastes like soap).
My Dad likes shellfish, however. It does not have that fishy taste to him.
It could be a texture thing. My brother never liked the way everybody else made fish, but likes my method. Most folks overcook fish and it's very dry and I've just never tasted a good baked fish. I pan fry at medium heat, with just some salt and pepper, using Pam and cook 'just' until no longer pink. It continues to cook for about a minute after you take it out of the pan. For salmon, cook the same way until it flakes to the center (salmon is pink even after cooking). Salmon is often the best fish to start with, IMHO.
I can't help you with canned salmon, however.

I'm with your hubby on the hating fish thing, and I've tried lots of different kinds. Personally, about the only fish I will eat is orange roughy because it doesn't smell so strong and fried catfish with LOTS of tartar sauce.
Orange roughy is so mild that even a light lemon butter or dill butter will disguise any slight fishy taste. And catfish is just an excuse to eat tartar sauce anyway, so he won't even know what's hiding under the blizzard of white stuff.

Stick to white fish such as Halibut or cod since they seem to have a less fishy taste. The only way I can get my brother to eat fish ( he despises it) is with fish and chips. Everything tastes better beer battered especially if cooked right. Good Luck with this endeavor, i know how tough it can be.

Vegetarians in basic terms dont consume meat. So besides i think of an excellent variety of the flavour has to do with how the fish is waiting. My fashionable fish is flounder. i might stay removed from broiled fish and that i in my view dont consume fish out a lot reason it variety of sounds like they only can not do away with that "fishy" scent.

I would advise having him try mahi mahi, or halibut.... or maybe even swordfish. They are all firm white fish and even kind of have a texture similar to moist chicken.
As well, even though these fish have delicate taste, try a stong marinade the first time out the door. So he's no overwhelmed.
These things should make for an easier transistion.

Stick to the white bottom dwelling fish, flounder, halibut, cod........those are the three I stick with when I don't want to screw up a dinner party with someone who doesn't like fish, so I AVOID serving "fishy" tasting fish, such as Salmon.......If you try halibut or cod, BE SURE YOU DON'T OVERCOOK IT!!!!! THAT'S A FATAL FLAW IN COOKING FISH!!!!! Best options for doing it??? Simple is best.....pan fry it with some butter, olive oil (just a bit of both)........salt and pepper, a squeeze of fresh lemon juice/splash of white wine and you'll probably have a winner on your hands........
Look for fish that is fresh by asking the fishmonger (fish guy/gal) when it was caught, and if you can smell it, it should have a sweet scent to it, like the ocean.....IT SHOULD NOT SMELL LIKE FISH.......The freshest of fish don't.........Best of luck, and you might want to point out the health benefits to your husband......clinical studies show that with diet and exercise, fish high in Omega 3 Fatty Acids can help reduce the chance of heart attack by almost half.....Best of luck and enjoy.....and I hope he does too.....

Depending on the area you live should really determine the fish you buy.
If you live near the coast...get the fish fresh from a fish market.
Most people don't like fish because what they are getting isn't fresh,
If your guy is a steak lover...Sword fish is great! you can grill that just like you would a regular steak as it has the same consistency as a steak. Steak seasoning or terriyaki style is great on a sword fish.
does he like tuna out of a can (like a tuna fish sandwich)?
If so..a nice tuna steak...cooked to medium...not over cooked
Or also salmon which has the same texture as tuna...is also a good choice( again..as fresh as possible)
Talapia and and light white fish(cod, flounder, etc) can be great...however...it is visually more likely to remind him of "fish".
Tarter sauce and lemon traditionally go with fish...But there are TONS of other things to top sprinkle or marinate in or serve with fish.
Salsa, Cajun seasoning, garlic and tomatoes, steak seasoning, terriyaki sauce, the list goes on.
Think of his favorite flavors or food and incorporate that into a fish dish!
At the very least..try to get a fish that is readily available fresh in your area to ensure the best quality and taste.

I never was a seafood fan until recently...now I love Mahi Mahi and Red Snapper. Take him to the Outback Steakhouse and try their Mahi. It is a thick cut of fish. Or try grilling the snapper with a little bit of olive oil...leaving the skin on then remove it right before serving...this gives it a yummy almost buttery flavor.

All can say is good luck! My hubby hates fish also, even tuna.I've tried everything to get him to eat it. I just keep the peace and make him a burger when I have fish.25 years of marriage isn't worth throwing away over fish!!
