Anyone have recipes. I've already tried oatmeal/craisin cookies. (They were good)

This is a really easy and yummy snack......it keeps for a long time in a tupperware:



CARAMEL CORN & CRAISINS® SNACK MIX



kid approved

INGREDIENTS:

2 quarts popped popcorn, unpopped kernels removed
3/4 cups granulated sugar
1/2 cup firmly packed brown sugar
1/3 cup light corn syrup
1/3 cup water
3 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon vanilla
1 6-ounce Ocean Spray® Craisins® Original Sweetened Dried Cranberries
1 cup semisweet chocolate chunks or chips
1 cup honey roasted peanuts

DIRECTIONS:

Place popped corn in large bowl; set aside.

Combine granulated sugar, brown sugar, corn syrup and water in medium saucepan. Bring to a boil over medium heat, stirring occasionally. Brush sides of pan with pastry brush dipped in water to remove any sugar crystals. Boil until mixture reaches 300° F (hard crack stage), about 6 to 8 minutes.

Remove from heat. Carefully stir in butter, salt, baking soda and vanilla. Pour syrup over popcorn; toss to coat. Spread on waxed paper to cool. Break up into chunks. Cool completely.

Combine cooled caramel corn with remaining ingredients. Mix gently.

CAUTION: Caramel is very hot and can cause severe burns. Use caution when handling.

Makes 11 1-cup servings

I like these cookies..
Cranberry-Orange Cookies
1/2 C. pure maple syrup
1/2 C. shortening or margarine
2 egg
2 Tbsp. orange juice
2 tsp. baking powder
1/2 tsp. salt
1 C. whole wheat flour
1 1/2 C. unbleached white flour
1 C. dried cranberries
2 tsp. orange zest
natural sugar
Mix syrup, shortening, egg , orange juice, and orange zest thoroughly. Add everything else except cranberries and mix well. Stir in cranberries. The dough should be sticky and a bit elastic. Not really typical cookie dough texture. If it's too messy to shape by hand then add a little flour until it's more pliable.Shape dough into small balls and place on non-stick or greased cookie sheet. These cookies aren't terribly sweet as-is so you can optionally do the following to give them a light sugary coating. Flatten dough balls with the bottom of a glass dipped in sugar. These tend to come out puffy so it's best to flatten the dough balls a bit even if you don't put sugar on top. They can get a little gooey inside otherwise.Bake at 375 degrees for 8-11 min

Broccili Craisins Salad very yummy


One bunch of Broccili cut, 1 cup of Craisins 1 Cup of Pecans, 5 strips of cooked bacon (crumbled), 1 Cup of Cheese, 2 Tablespoons of Sugar ( or how ever sweet you like) 1 Cup of Mayo and 3 tablespoons of Balsmic Vinegar
Mix all togther and you have a sweet and tangy salad that is good for you but also tasty
I eat it every holiday

By all means, make Cranberry Walnut muffins.
I was a baker for several years and when I introduced those muffins, they over-sold all the other fllavors I had.

1 cup of white flour
1 cup of whole wheat flour (can use 2 C white flour)
2/3 of a cup sugar
2 tsp. baking powder
2/3 tsp salt
2/3 of a cup milk
1/4 cup canola oil
2 tsp. orange rind
1 tsp. vanilla extract
1 egg
1 cups of fresh cranberries, left whole (or 2 cup crasins)
1 cup craisins
1/2 cup chopped walnuts

Preheat oven to 400.

1. Combine white flour and salt in a large bowl, mix well.
2. In a separate bowl combine milk and egg and combine well.
3. Form a well in the center of the dry ingredients. Stir in the wet ingredients. Once combined add cranberries and walnuts.
4. Fill muffin tray way to the top and bake for 20 minutes and Enjoy!!

Apple Cranberry Salad

Mix of Romaine and Iceberg Lettuce
Thinly slice:
One Cucumber
One Red Delicious Apple
One Yellow Delicious Apple ( use both for color)
1/2 cup grapes
1/2 cup pinneolas (pine nuts)
1/2 cup craisins

toss all together and serve with a Spicy Italian dressing or a Raspberry Vinaigrette dressing.

(Depending on taste add fresh radicchio, fennel, or bleu cheese crumbles to top)

Try and leave them in a fair amount of water with a litle bit of lemon in the fridge for about 12 hours. Beware - use a big enough container, as they will swell quite a lot. Then add the double amount af sugar compared with the weight of the berries and simmer for 1 hour. Then sift out the berries and keep on simmering until you get a thick sirup. This is wery good for ice-topping, basis for dessert-sauce (add cognac i.x) or simply mix with boiling water, then put in fridge and use as refreshment drinks. Does taste quite good as mixingwater for vodka as well.

CRESCENT CRANBERRY WREATHS

1/3 cup finely chopped sweetened dried cranberries

2 tablespoons cherry or strawberry preserves

1 can refrigerated crescent dinner rolls

1 ounce white chocolate baking bar, chopped

1/2 teaspoon oil


Heat oven to 375 degrees. Lightly spray cookie sheet with cooking spray. In small bowl, mix cranberries and preserves.

Unroll dough into 2 rectangles. Press each to form 8 by 6 inch rectangle; press perforations to seal. Spread cranberry mixture over 1 rectangle to edges. Place second rectangle on top; press lightly. With sharp knife or pizza cutter, cut lengthwise into six 8 inch long strips. Twist each strip 3 times and shape into ring on cookie sheet; pinch ends to seal.

Bake 9 to 12 minutes or until golden brown. Cool on cookie sheet 2 minutes.

In small microwavable bowl, place baking bar and oil. Microwave on HIGH 30 seconds; stir until melted and smooth. If necessary, microwave 10 to20 seconds longer. Drizzle over warm rolls. Serve warm.

Makes 6 rolls.

I use those in a lot of things. For one thing, I put them in muffins. Just use a favorite muffin recipe and throw them in. This one may sound weird, but it is wonderful, I put them in stuffing when I make it (like at thanksgiving). They are also really good on salad. Heck, just eat a handful of them when you want something sweet!

Add them to chicken or tuna salad, green salad with dried cranberries and walnuts or pecans to garnish after viniagrette dressing. Cranberry bread similar to banana nut bread.
