my Mum be home at 8, gonna suprise her with meat and onion
pie, have sorted meat an onions (and the peas) but have
found A great lump of frozen pastry !! anyone tell me how
to make pastry to cover a small dish 7 inches !! if no
help in the next hour.. its just mince .....

Refridgerator Pastry

5c. flour
1tsp. salt
1tsp. baking powder
1 pound of lard

2/3 c. water
1 egg
3tsp. brown sugar(omit if making meat pies)
1tsp. white vinegar

Cut flour, salt and baking powder into lard until crumbly. I use my Kitchen Aid mixer. Beat together the rest of the ingredients with a fork and add to the crumbly mixture. Mix until the pastry starts to come off the sides of the bowl. If too sticky add a bit more flour.

Use right away or store in the fridge for 4 days or the freezer.
Makes enough for 4 double crust pies plus 1 single crust.

The most excellent flaky pastry with no fuss.

Plain pastry

1 1/2 cups all purpose flour
1/2 tsp salt
1/2 cup shortening
4-5 tbsp ice water


cut shortening into flour til it resembles small peas. splash water onto flour mixture 1 tbsp at a time and toss with a fork. Keep splashing and tossing til a stiff dough is formed. roll out to 1/8 inch thin and turn into pie pan

for a double crust, make double recipe

the rule is half fat to flour so you will need 8 oz flour and 4 of margarine type spread. rub together till it's like bread crumbs then mix with a little water to bind it. roll on a floured surface. glaze with milk before cooking to brown it

4oz plain flour, 1oz lard, 1oz marg pinch of salt, then a little water to mix to a med soft dough, let rest 20 min then roll to required thickness. Good Luck
