Example 1 cup shortening, 2 cups flour, ... if you replace the shortening with butter, I believe you need to increase the flour content because butter has more liquid content than shortening. Seems to me Alton Brown had this on his show, but I can't remember.

I have been involved with many different races and my fiance is black. We usually cook stuff like porkchops, mac & cheese and rice or change up the meat to hamburger steak. This weekend I asked him if he wanted something different cause we were going to the grocery store (we live together) he said he wanted some black eyed peas....I was like....WHOA!!!! But I asked my mom and she told me how to cook them and my fiance loved them...I also fixed some corn bread, bbq ribs, mac & cheese and deviled eggs, his response was dang now I know you can cook soul food this needs to be a every Sunday thing. Long story I know but next week he wants collard greens but neither one of us know how and my mom only cooks them outta the can. So please help me. I need a good recipe. Also any other recipes for soul cooking...please let me hear them. Thanks!!

I use Frying Magic to coatt he outside which is pretty much flour, cornmeal, and spices. I fry it in canola oil on med high for about 5 minutes on each side and the batter is golden brown. But when I eat it the batter is still soft and not crunchy. What am I doing wrong?

I have 6 cans of canned pumpkin in my cupboard that I would like to use to make something good for Christmas. Something that isn't too complicated and time consuming. Does anyone have any recipes that they won't mind sharing that would use canned pumpkin?

Thank you.

im planning to give cookies as christmas gifts, and ive been searching for a really relieble recipe. not necessarily the christmas-cut cookies, id like the standard chocolate-chip recipe that i can use for other occasions after christmas.

if you have tried-and-true recipes, id really appreciate it.
