I can't find any dark-gilled open cap mushrooms, what can I use instead?

I am surprised you cannot find these but as a last resort (or even better are large portabello mushrooms!

Try the big supermarkets.

I love mushrooms. I'd love to know what u r doing with yours

I would remove the stem and the gills (the papery ribs under the cap) from mushroom of choice.
