Hi,
I'm eager to get this done but don't know when is the earliest I can ice the cake. If I do it now will it go off?? I'm going to keep it in a cake tin.

When can I ice the Christmas cake?

Once the cake is cool you can do the actual icing. From the point of view of how long before Christmas you can ice, if you are using the traditional marzipan and royal icing it will keep for a good while without going off - although it might go a bit hard. Do it now and keep it in an airtight tin in a cool place and it should be OK. However, don't do it more than a week before if you want it to be at its best.

According to the Goddess of cooking and baking that is Delia Smith, once it's cool, turn it upside down and make lots of little holes with a skewer or cocktail stick and then 'feed' the cake with sherry or brandy, then you should leave the cake for 48 hours before applying your marzipan and icing and as long as you keep it in an airtight container, it wont go off.

It is best to wait at least 45 mins to ice the cake. If you are in a hurry, then it is best to place it some place really cool.
If you put the icing on before the cake has cooled down enough, most of the icing will be absorbed by the cake instead of resting on top of it.

Wait til the cake is a little cool to the tough. you can speed this process by sticking it in the freezer. Make sure when you put it in the tin that the frosting has had a chance to set. Don't let anything touch the icing because it may come off and that's not pretty.

You have to wait until it's completely cooled off, otherwise the frosting will run! I've made the mistake of doing that many times, being anxious to ice it, but I've learned that you just have to be patient. If you want it to cool off faster try putting the cake in the fridge for a little while.

Last year my daughter iced our cake on Christmas Eve. She made the icing too runny and it slipped off overnight onto the plate. It was funny - but I suggest you do yours earlier just in case.
My mum used to do hers about a week before - so nothing 'showed' through.

Dont ice it until a few days before eating, keep it in the tin and give it a good slug of brandy on top and let it soak for a good while and it will taste excellent and moist at christmas.

ice your cake a soon as it is cool to the touch that way the icing doesn't melt on the cake

Well i am putting the marzipan on today and then icing it next week, it shouldnt go off if you keep it in an air tight tin.
