Depends what type you like. I usually dry out some regular stuffing bread, but then use half of that, and half cornbread. Mix it with lots of butter, celery, onion, sage and a little paprika. Pretty simple. Toss everything together, and just warm in the oven. Sometimes I use that as a base, and add other things, like small pieces of sausages/cranberries/apples/etc. . . .You can't really go wrong with stuffing, so it depends on the mood and what you think your guests will like. Plus you can work it around other dishes you are serving.

My Mums recipe was 1 cup of breadcrumbs 1 cup of oatmeal 1 cup of shredded suet 1 chopped onion salt and pepper mix well add a knob of butter and steam in a bowl for 1-2 hrs.You can add other flavours to suit.Mum used to tie hers in a cotton cloth and cook it in the broth it was lovely.I'm afrad I'm lazy and do mine in microwave its's ok but not as tasty.

USe a pack of paxo, mix with sausage meat and chopped apricots which have been soaking in port overnight, add some fresh onion and butter. Cook.

a pound of good sausage meat, 1 onion chopped, 2 beaten eggs,half teaspoon mixed herbs,. mix all together.Put in casserole dish in medium oven for 30 mins,and absolutely gorgeous. Really simple but effective.

My mum always uses a sage and onion as a base and adds in sausage meat, water chesnuts and cranberys etc - you can't really go too wrong with stuffig!
