I am a big fan of foods created by top chefs, sometime their cookbooks are hard to find. I am looking for a place on the net (maybe a database?) where there are top chef recipes? Food network has a good page ,but tried most things there.

Any Jean-Georges Vongrichten recipes preffered.

I'm making a "chocolate rum mousse" recipe which calls for a couple of teaspoons of rum.

Does anybody have any ideas for a handy non-alcoholic substitute I can use for the rum that would make it taste pretty much the same?

When i was young we has a kids cook book with chocolate crunchies in. They were soooo nice.
