Hi,

I love this question, as Stuffed Peppers is one of my all time favorite comfort foods.

The way I make stuffed peppers was passed down from my Dad. I still can't think of any other way that is as good.

First, get some nice fresh green peppers from which you cut off the top and remove the seeds from the inside. I always either parboil them on a stove top or steam them in the microwave for a few minutes, just enough to soften.

Meat ingredients:

1 lb chopped meat
1 finely chopped small onion (I steam these a bit so they're very soft)
1 beaten egg
1/2 cup cooked cold white rice
1 tsp salt
1/2 tsp white pepper
1 tbsp fresh chopped parsley or 1 tsp dried parsley
1/4 ketchup
Dash of worcesteshire sauce
Fresh breadcrumbs are optional, depending on whether your meat mixture is too wet

I have to admit, I do "taste" this before I cook it to be sure I like the seasonings (my Dad used to eat steak tartare so I didn't find this too gross), though I spit it out now.

Stuff the peppers loosely with the meat, and any remaining meat can be formed into meatballs.

Now, the really easy part. Open up a couple of cans of Campbells' Tomato Soup and prepare as normal. Make sure you've got enough so that when you add your peppers and meatballs to it, they are covered by the hot soup. Let cook for about an hour. You'll see that even though you haven't browned the meatballs, the color will change as they cook. If you cut open one of the meatballs, you'll know if they're done, and even the peppers should be done if you stuffed them a bit loosely.

My Dad used to serve this with boiled potatoes. Personally, I like elbow macaroni and I sprinkle fresh parmesan cheese over all of it.

Yummy.

Best wishes,

Barb

I see you have a good basic recipe and the add what you like advice is good. Here are some extras. Cabbage is a surprisingly good addition you might not think of.. Also the cooking time and temp should take this into consideration. If you really like the green pepper taste then cook it in as low a temp as you have time for. High temp distroy the pepper taste, but some like it like that. Instead of using the oven which sucks energy like a Hummer (vehicle) I use an elecric frying pan with lid, mines pretty big. You have way more temp contrl and there is that constant dripping of its own juices back on the dish which otherwise goes up in smoke. Also if you add a little water then at the end you get a great gravy to add a little butter to and put on top or burrow a hole in them and pour the gravy in and let sit for a while. If left over are left in the frig, just like spegetti or chili the second day is better. Freezing ruins the pepper part of the dish. Now this step is not for everybody but if when it has cooled a little you stick in the blener lor speed for jus enough time to mix then the taste mixes super, and you can like put on top of a baked potatoe. This is really making me hungry and I have all those extra peppers from the garden, no I lost 5 I'm gonna keep um of, going to the spiritual stuff bye

Stuffed Peppers

3/4 cup White rice
1/2 tsp Turmeric
1/2 tsp Salt
1 1/2 cups Water
6 - 8 Bell peppers (orange, green or red)
1 lb Honeysuckle White sweet Italian sausage
1 Medium onion, diced
1/4 cup Parsley, chopped
1 can (15 oz.) black beans, drained
2 cloves Garlic, minced
1/2 tsp Black pepper
1/2 cup Parmesan cheese, grated

Preparation
1. Preheat oven to 375F.
2. Place rice, turmeric, salt and water in pot. Bring to a boil, cover and simmer until rice is cooked, about 20 minutes; set aside.
3. Remove casing from sausage and crumble into frying pan.
4. Add onion and garlic; fry over medium-high heat for 5 minutes.
5. Finely chop 1/4 cup fresh parsley. In a bowl, mix rice, parsley, and black pepper.
6. Drain the black beans and add to the mixture. Add the cooked sausage and mix thoroughly.
7. Cut the bell peppers in half lengthwise, or cut the tops off; remove the seeds and core.
8. Fill the peppers with stuffing and arrange in an oiled baking dish. Top with parmesan cheese.
9. Cover with foil and bake 45 minutes or until peppers are tender.

To shorten cooking time, use the microwave to cook stuffed bell peppers on high for 10 minutes.

For stuffed bell peppers I just get 4 peppers cut them into half. Brown 1lb of ground beef, make two cups of white rice, 1 can of tomato sauce, and cheddar slices.

Mix the beef, rice and tomato sauce together. boil the pepper half's for about 15 minutes at 350 and then stuff the beef mix into the peppers. bake for about 15 minutes then put a slice of cheese on each pepper and bake for 5-7 more minutes or until the cheese is melted

YUM!!

I'm not trying to be sarcastic, but just mix up things you like and stuff 'em right in there-then bake at 350 until peppers are cooked.
